This gluten-free cookie recipe without baking powder or soda is crispy to the core with chocolaty flavor, making them stand out. Ravneet Bhalla loves healthy cookie recipes but that does not I indulge in guilty eating. One cookie with 1 cup of tea/coffee is good enough for me. But there has to be a cookie to pair with my hot cuppa of tea/coffee. #healthycookiesrecipes

hide and seek biscuit ingredients
1/2 cup+1/4 cup- jowar atta (sorghum flour)
3 tbsp- desi ghee (solid) or 2 tbsp butter
1 tbsp milk/curd/water
1 tbsp- flaxmeal (optional)
chocolate chips
1/4 cup- jaggery powder
1 tbsp- cocoa powder
How to make healthy cookies with jaggery
Powder jaggery along with 2 tbsp jowar atta. I did this to break down jaggery grits. Pulsing with flour helps this process.
Next add 3 tbsp of solid ghee and start whipping the mix. This is known as the creaming process in baking terminology.
This will take time-up to 3 minutes. You may use a hand whisk or an electric beater.
Add flaxmeal and milk./water/curd.
Mix again until it looks well incorporated.
Add cocoa powder.
Sift jowar atta in batches and add the whole of the amount given in the cookie recipe only if your dough is too loose. Stop where you get a soft dough. The tighter the cookie dough, the harder the cookies.

If you want to make the cookies melt in the mouth for someone who cannot munch on them, skip the liquid in the recipe and adjust flour accordingly. Aim for a soft dough consistency again.
If you are not willing to use jowar atta, you may substitute with flour of choice.
Preheat oven, convection, otg to 160 degree celsius for 10 minutes. Airfryer can be preheated for 3-5 min only. It is the best appliance to own. I have shared my love for airfryer in another post. Check the reasons you should buy an airfryer.
Add chocolate chips or chopped chocolate and gather into a ball.
DO NOT KNEAD.
Flatten like a thick chapati. Make shapes. Bake for 8-12 minutes at 160 degrees celsius.
Let hide and seek like jowar cookies cool down before packing them in an airtight container.
Enjoy with a hot cuppa.
Guilty indulgence is never recommended.
A cookie is a cookie!
One cookie with a hot cup of tea or coffee is enough to enjoy the best of both worlds as stay healthy.
Do not forget to exercise daily, friends. Healthy eating cannot go alone. You ought to work hard and shed some sweat to stay fit.

Yes, you may. In fact, sprouted jowar is even healthier and packed with an extra dose of nutrients and fiber. Well, all i can say is add the flour little by little until you feel the dough is perfectly soft for crispy biscuits. You may need less amount of sprouted flour here. Please let me know what more jowar recipes you look out for. I want to post those too now that i am back home.

How sweet and kind of you dear. Glad you find healthy recipes on the channel useful. Well, to bake cookies in microwave, you will need to set them at the same temperature. However, timing might vary. Jowar cookies might take longer in your appliance..bake for the given timing and check..if cookies look unbaked, you may bake longer for 2-6 min...an airfryer bakes really quickly... remember to always bake cookies at a low temperature..this gives you crispy Biscuits without baking powder soda

@@sanyogitagiri9797 sure dear..I would look forward to your feedback.. however, do not over bake, which might result in hard cookies , though those who bake my cookies in otg or oven tell me that it takes 20-22 min for a biscuit that bakes in 12-14 min in Air fryer..but every machine differs..so bake for shorter intervals and check..that way you ll get an idea as to how long it takes your microwave to bake Biscuits

And after letting it cool if I feel it's not crunchy and little softer than I'll bake for more 5 min may be it will be better than getting it more harder or burned inside 😂. Thanks alot mom ❤️

@@sheebadavid the cookies dont taste bitter due to cocoa powder. but your flour might be old or stale...jowar tends to get bitter as it ages...if you want to add extra cocoa, you should increase the amount of jaggery powder

Well, are you talking about malai or cream on top of boiled milk? If so, then yes. But do not add any other liquid in the recipe and stop adding any extra flour when you get soft dough consistency.

@@rudiprocks yes, dear...as i said above, please skip any additional liquid if you use malai (cream) and then dont add all of the flour mentioned in the recipe in one go...add in small batches and stop when you get a soft dough...never ever knead cookie dough

Yes, you may ..in that case avoid using liquid in the recipe...just make cookies dough with coconut butter alone..else, cookies ll turn hard if you add liquid

Hi.....my cookie dough became very dry even after adding 2-3 tbsp of milk. Can I add more milk in that case? Or should I add more ghee/butter?

Please don't dump all flour in one go.. I always suggest adding flour little by little and stop when you get soft dough consistency..don't add extra milk..it ll make your cookies hard.. there's a certain fat liquid ratio and if you go beyond it, you ll not get desired results..please add more fat (ghee/butter whatever you are using).. there's no other way to revive the dough

Ohh is it !!!!! These days busy with kids online classes 😃 But never miss out on your healthy recipe videos. Cookies are my kid's all time favourite , so I keep trying more cookie recipes and I should say your recipes never failed. The concept of 'no BP no BS ' is what I love in your recipes.

Thank you for trusting and trying out the jowar Cookies recipe. Well, you can double all ingredients except the liquid..add only 1 tbsp first..if the dough is tough to bind, add 1 more...I hope that makes sense. I have many other healthy cookies recipes on the channel without baking powder soda. Please do trt those out too .. the jowar biscuits should store well for at least 10 days..if you want to keep them longer, pit them in the oven for 2 min and they ll be fresh again. Someone in the US makes all of ky cookie recipes and stores them for a month.

An airfryer is safer than microwave. It uses hot air technology and not radiation waves, unlike microwaves. Being from a research background and also a health freak, I do ample research and brainstorming before buying anything sweetie. An airfryer is just like an oven, which is compact, lightweight and sturdy. It's absolutely the best way to bake, fry or cook anything. I bought my prestige airfryer 5 years ago and have not touched my convection since then. It's safer than a microwave and energy efficient too. I hope that makes sense dear.
