And yep, steam it if you like, same benefit!…and shredded brussel sprouts would be another excellent shoice (I love to add grated brussel srpouts to my skinny omelette when I have them). Sure, an very occasional dollop of mayo is ok just not lots of it but I might suggest a healthier option and it's what I do all the time... mix non-fat greek yogurt (1/2 cup for example) with a smidge of dijon mustard (½ tsp), salt (½ tsp) and a bit of olive oil (1 tsp)... the measurements are give-or-take since I usually just eyeball things. Another option is to make your own mayo with extra virgin olive oil and egg yolk (and garlic if you are so inclined), which I make too since it is such a standard here in Spain, called alioli (and a happen to have a video for it!).
