Hi Erika, I am making these they are in the dehydrator now (smell yummy) I mix mine by hand since I had cacao powder and unsweetened finely shredded coconut. I don't have a Vita Mix yet (will get in Dec.) but I used my coffee grinder (not for coffee) for the almonds. I didn't have Macadamia nuts on hand so I used more almonds. Thank you so much for sharing this recipe, I am transitioning to a high raw food diet. Blessings

Hi Jack! Yes, Cacao powder would work great too! In fact, you'll probably end up with a much smoother macaroon - I'll bet it will be delicious! =) One of the advantages to the nibs is that you usually can get them a little bit cheaper un-ground - plus some people point out that they are fresher that way, and less processed. But, then you have to worry about grinding them yourself. Either way, the recipe should work fine. Enjoy & God Bless! ~Erika

In Canada, I am using 20% macadamia and 80% hazelnut. Raw macadamias are very costly and not exactly "green" around here since they have to come from such a distance. I also add a bit of unsulphured molasses and a dash or two of anise as we do not like agave. Thanks for your fun instruction!! My partner loves these cookies...we are not raw foodies although this is sweet addition to our vegetarian and largely whole food lifestyle. They are lovely with a cafe au "almond milk"..lol.

Good Question, they are not crunchy or hard when they come out - but rather the shell is just firm enough to hold it together while the inside texture is just like a chewy macaroon. God Bless! ~Erika

@Daniea3 Oh my goodness, hazelnut sounds divine! :) I'm going to try that next time I make these! We're not 100% raw foodist either, but we do try to maintain a 50/50 raw/whole food diet - and dessert is the easiest way to do raw food! :) Thanks so much for the comment... Enjoy & God Bless! ~ Erika

@jelvis69 Thank you for the comment! It doesn't cost too much to run the dehydrator since the temperature stays so low. The Excalibur website says it only costs pennies per hour, and I've never seen a spike in my bill when using it for long periods of time - which is often! :) The dehydrating process does crisp up the outside of the cookie and keeps it from falling apart - plus it will store for much longer without spoilage this way. @romo1921 If your oven has a very low setting (like 120 degrees or less), then yes, you can put them in your oven. But unfortunately, the ingredients wouldn’t hold up under anything hotter. Because of the coconut oil, I’m thinking that the cookies would either melt, or fry. Plus, you would miss out on all the amazing nutritional benefits of leaving them ‘raw’. But if you decide to try the oven, let me know how they turn out… you might just discover something yummy! :-) God Bless, ~ Erika

Hi Erika, thank you for the great videos! You worked out the ingredient cost but what do you think the power cost is for dehydrating something for 30 hours? Why do you dehydrate them? Does the dehydrating help them meld together and have a crispy texture? Would they not be just as good chilled? Thanks, james :)

@fontrella Good Job! I love hearing how you improvised and made the recipe work for you... even without all the tools and ingredients! :) I hope they turned out delicious! I can't wait for you to get your VitaMix- just think of all the amazing things you'll be able to create then! :) Our family has transitioned to an approximately 60% Raw / 40% Whole Food Diet - even my kids! So cacao nibs=cacao powder? I have both, but I use my nibs for ice cream topping. You taught me that...lol, and it is so yummy. I love your recipes. I am going to try this one replacing the macs for cashews. Do you think that will work? Thanks for everything=))).

hey i was wondering~ do you use the special thing for the vita-mix to make almond flour? i'm considering various blenders :)

Hi 'roskandy' ! Thanks for the comment... I'm assuming that you mean the 'dry blade container'? - I do have the dry blade container, but it is not required to make almond flour - I use the regular blade all the time. It turns out that the VitaMix regular blade is good for just about everything! Hope that helps! Feel free to ask more questions if you need to before buying one! :-) God Bless!
