its simple,dont overthink it. just look up IMPBA or NAMBA and they have the course layouts in their rules

If I was the OP I would make it a good size just kinda run one of each boat for each class and kinda get a idea how far they go before it's to fast or they reach top speed then make it a little shorter then the length it took for it to reach top speed or speed where it was getting to fast and adjust accordingly
