His voice cracks far less in RDR2, I think it reflects him so well. He had a cause, he had his people (and a plan of course) and his image was so important to him, he could control himself and hold to that. When all that was gone he just lost himself, shown in one of many ways in how he just gives up controlling his voice, which says something considering how much he resorted to rhetoric and speechmaking.
