I do not know what kind of locomotives they have in this or what the cannon used for ammo, but that appears to be a steam locomotive and in the real world the front 3/4 of it is a tank filled water and steam under high pressure so the cannon would, at least, put a hole in the tank releasing the pressure and causing the locomotive to stop. It is not goung to be on fire . It is all steel

Before I found out about the tunnel up in the Grizzlies, my preferred method of robbing a train would be to shoot the locomotive with a dynamite arrow on Bard's Crossing. The bridge is so long that the train would often stop with at least fifty feet on either side. Then I'd shoot the guards, maybe save one for throwing over the side, and get to woik robbin' folk.

The better way is crossing bridge. if you stop the train in the middle of the huge bridge the lawman can't get to you. But make sure you told your horse stay back before that

Generally when I'm halfway done with the train lawmen show up, and once I'm done fightin em, the rest of passengers are gone. I go outside the train and they are nowhere to be seen. I'm just like: Bruh, Why.

Best case scenarios. The train catches on fire, leaving no one alive to pull the breaks so, while still on fire, the wheels keep spinning and the train just keeps going on momentum. Or, the intense heat from a fire started by a cannonball overloads the pressure in the boiler causing it to explode, but the momentum of the train’s current speed still carries it forward as the engine explodes, and the coaches keep going until they crash into debris or derail. OR, the impact of the cannonball immediately breaches the boiler, which immediately causes the pressure explosion which could destroy and/or derail the train, but, AGAIN, the momentum of the train carries the debris forward as it rolls along the track, crashes, and/or details. So, no. A cannon cannot STOP a train, because even though it could damage or destroy it, a cannon can never produce enough opposing forces to overpower the train’s horsepower and bring the locomotive to a sudden and immediate stop.
