Why are the inequalities not weakend to non strict inequalities(so to less equals) by the limit? Ok, even if they were weakend it would not change the proof as whole, because you renamed the epsilon anyways.

If you are confused by the strict inequalities, simply use ≤ all the time. It does not change any argument in the proof.
