What I learn from food joint is that how good the food/safety from food poisoning is based on their floor cleanliness. If they aren't aware of the floor cleanliness, they're likely aren't aware of the condition of the food that they're making.

That's partially true, could also be they're super busy and don't have enough staff (I doubt it tho) could also be they're just lazy, could be the shift managers aren't doing their job right, etc. I wouldn't say a dirty floor means food poisoning, cuz there's just so many reasons that could happen, and even some of the nicest restaurants can give out food poisoning. The way that bagel looked tho suggests their grills aren't cleaned, so I wouldn't die on that hill either. Just want people to understand that a dirty floor doesn't instantly mean your gonna get bad food, cuz that's just not true, there's plenty of places that are really good food safety wise yet they have a multitude of issues they gotta face every day yet there's only so many hours in a day. Food workers got it bad enough they don't need every customer to think your gonna poison them because there's some straws on the floor ya know

@@Kratos-eg7ez It doesn't have to be mopped, but it's usually when they didn't even bother to even sweep the floor (it's very obvious the difference between swept before opening only & rarely sweep at all). My irl experience is that my sis (she really has bad judgement taste) decided to bring me to a food joint that she knew. There I realized how "sandy" the floor are, and a few months later, it got shut down for hepatitis case. Oh, the food was mediocre btw.

Speaking as a cook/hospitality everything person, you can’t judge on floor alone. There’s a lot of little red flags that can indicate a dirty kitchen, but floor alone isn’t a good place to judge. A lot of the time, FOH are responsible for what customers spend time in; including floors, tables and seating. It probably means they’re understaffed, bad management or lazy team who aren’t fussed about regular sweeping. It can mean that things are slack in kitchen too, but it’s hard to say it’s a “definite”. Things like dirty menus, bathrooms, FOH who don’t wash hands often (coughing and/or touching hair and not washing hands), sticky tables and seats, unpolished silverware, etc can be indicators that management are very slow or lazy, or don’t care and therefore anything flies. That could mean kitchen is also a bit complacent and could be dirty too. The killer though is the menu. If they often have a big menu with varied items, a lot of “specials”, or serve oversized portions at low prices, you’re probably getting frozen, low quality food. Think those viral videos of those takeaway Asian restaurants with the paper plates filled mile high with noodles and rice and protein. Not to say they’re dirty, but they’re more than likely going to hit you with food poisoning on the basis that their food is likely being stored for longer/possibly unsafe conditions because the lack of streamline in the menu or popularity of items. If people are only buying at the end of the day when you do crazy markdown sales, it’s probably been heated for like 5+ hours in hot bains getting nice and germy. Especially if it’s a run down place with dodgy food safety knowledge or broken equipment.

As someone who worked at a café that sold bagels, there are some people who legitimately love their bagels that burnt. Like, I'm talking, "will march back in yelling and screaming that we didn't toast their bagel at all if it's not blacker than the void", burnt.
