Dining out at a steakhouse is typically a pretty fancy affair, and one that customers go into expecting to pay higher prices than they would for the average burger and fries plate. The dining experience isn’t all about the food, though - much of it comes down to the restaurant’s servers.
Because steakhouses are generally considered to be an elevated dining experience, steakhouse employees have to do things a little differently. But how far does it go? From sharing tips to serving customers after closing, these are the really weird rules steakhouse employees are forced to follow.
Also, just a heads up, you may want to keep an eye on the comments for this vid. It talks in absolutes, but these things don’t happen in every steakhouse restaurant situation (or even most). Most of these are pulled from Outback specifically.

Servers should NOT be allowed to talk to chefs. There is an expediter who calls out the orders to the chefs. Servers would disrupt this process and the entire kitchen would turn into chaos.

I don't think that I would really consider Outback to be a steakhouse. It's more like a casual restaurant that happens to serve steaks.

As a chef, it is much too stressful to deal with a server who has made a mistake or who has a customer asking for extras, modifications, or something off menu while trying to remain in composure at a fast pace in a hot, and chaotic environment.

i have had wait staff come in the kitchen stand in front of the stove, turn the burners on the grill all the way up as high as they will go so they can warm up on a cold day. it takes about twenty minutes to adjust the heat on a grill table, high is not what you cook and egg on or a steak. there is in general only fifteen minutes to get a order out with space to move around limited. keep the wait staff in the front of the house.

I worked at Outback. Their silverware is nasty btw, if it comes out covered in washed wet food or absolutely caked in soup you’re instructed to just wipe it off with a napkin and roll it instead of rewashing it. Also, most all their staff is high AF cooking your food so just don’t expect perfection. They work 12 hour shifts so I can see why they’re stressed and high. Outback treats it’s employees like shit. Restaurant I’m at now would scream at me for wiping a food covered spoon and rolling it, takes two seconds to put back in the dirty bin to wash.

Outback Steakhouse, haven't been to one in 20 years, if they all close their doors today it will be way to late. Folks, there are way better places to get a quality steak than the cheap cuts you end up with at Outback, do a little searching, those Mom & Pop steak restaurants are almost always better.

These all pretty much make sense: Tip pooling: how the food is prepared (good or bad) generally reflects itself in the tip most customers will leave. So if the kitchen is consistently putting out high quality and good tasting food they should get a cut of the tips. Talking to staff: it can slow down the kitchen and possibly lead to confusion if the wait staff is communicating customer complaints directly with them. They should be passing along any issues customers have to the head chef or to the manager. Talking about customers: thats likely not just a steakhouse thing. Complaining about customers is one thing, but providing enough details where the complaint gets back to the customer should be an issue and firing the server over it seems reasonable. Also the issue was that somebody didn't tip on a takeout order: not only is it a takeout order, but it is unlikely the server did anything other than ring up the sale and then go grab the bags from under a heat lamp and hand them to the customer. Rigid schedules: most restaurants have some kind of policy/rules on customer service and guides on things like how long until customer is greeted to length of time for interactions - its all to keep the restaurant flowing smoothly and making sure some customers don't get neglected over others. Serving after closing: again, not just a steakhouse thing but each restaurant's policy. I've gone to a few places where you walk in a minute before closing and they'll seat you and start the dining experience and others where they said "sorry, we are just closing up" while another place recently said the kitchen was closed but that we could still sit and drink at the bar if we wanted while they closed up. Being watched: thats just innovation. In the past they would have just had a time management person standing around with a clipboard and a stop watch.

I never understood this tip business, but in Europe, it doesn't exist. Is it because mgrs and owners of the restaurant want to keep it to themselves and pay a miserable wage to an employee that is making the food and the server that is bringing it to the table. I love going to a restaurant that has no cameras and the person that is bringing my food and the chef that made it will get my tip and will say keep quiet and not say anything to mgr

Tip pooling is the single dumbest thing I’ve ever heard. I’ve covered many BOH mistakes while serving or bar tending. The FOH staff takes the vast majority of customer abuse and vitriol. I really enjoyed the restaurant business in my early 20’s; now I’d lose my mind.

Tip pooling is not fair in any restaurant. The wait staff that is kind and busts their ass to please the customer gets the same as someone who doesn't give a shit. I refused to work at a high end restaurant because of this. You should receive tips according to your effort.

4:55 and bus staff has to know the entire menu before working there ...They take a test w/ the wait staff upon the interview process, the bus staff has to know each detail of the menu, the management says u never know when a customer will ask the bus staff at the next table what to order.....every other restaurant around that Outback don't ask their bus staff to remember their menu so....😶

As if the marginal YELP reviews for the local Outback compared to Texas Roadhouse & Longhorn weren't enough reason to avoid the fake Aussie "Outhouse Steakhouse" this video supplies more reasons to avoid - especially that they thought it was okay to put customers under surveillance along with the employees. If I want steak I'll get one from my butcher whose meat is raised and processed locally... Or pay about double for a dry aged prime at a downtown high end steakhouse!

Tip pool is greatly unfair. Tips are a way to improve service.now division equalizes good /bad service. I understand strict rules as steak is an expensive product. Getting it wrong kills profit. Online trolls are killers to restaurants. Yet response is tough since they know who you are, and they remain strangers,ghosts haunting your business.

The employees compliant wasn't justified. Tipping isn't mandatory it's customary but that's for dine in and delivers usually take out don't get tips usually. Now complaining to coworkers and friends sure, but social media is another problem especially when something is a customary thing and in some countries is insulting. Firing was to be expected which is why most people wait to speak out after they have quit the company Also it isn't only steak houses most places will keep the doors open until the last minute and continue service until all dinners leave.

Wait staff in America have a minimum wage of $2.13 pr hour. Add the minimum tip credit, and they earn a whopping minimum of $7.25 per hour. Ungrateful bastards.

A local but not inexpensive restaurant offered take-out during the pandemic...and even before. There was always a wait for eat-in. Customers started using take-out more often and stiffed the wait staff when it came to tipping. Restaurant, to the chagrin of many started adding a "curb-side" fee (approx. 10% tip). Now the restaurant does not offer take-out b/c those customers refusing to tip.....or conveniently forgetting it.

I occasionally have issues, where people just ignore me! yes! happened 3 days ago, but 1-3 times a year, this was a new steak place, out of town, never been there, after watching waitresses hit every table around me, over 15 min, people that got there after me being helped, I got up went to register, she apologized, asked if I knew what I wanted, so took my order, and I placed order for my wife, went back, 10 or so min later, waitress brought food to my table, only time they came, every table got great service, every one! just not ours! I had to get up to refill my own drinks, behind counter, 2 refills for me & 1 for my wife. they saw me, stepped away, and ignored, food was very good, but end of meal I went to pay, and my receipt was only 1 there, all others were took to tables. guess who didnt tip, plus 1 of my rules, is when I get up & go behind counter to refill my drink, I dont tip. only had 1 try to take glass from me several years ago, I kept on, I said they was too busy & I got it, and I went behind counter to fill it. I am a full fledged BIKER! I do look rough, even when I dress up, I do not look friendly, nor clean. my beard will touch my belt when I tilt my head, my hair will touch my belt. I wear a hat covered in skulls. I got several places I go to eat, from first time I went, always treated like a great customer, or family, so eat those most of the time, but we do like to treat ourselves occasionally, and try new places. as for being watched, I dont appreciate it, while I understand banks, grocery stores, but inside restaurants, NO! people take others, not their significant other to go out to eat, I took a lady several times, until I won her heart & she dumped her boyfriend, well over 20 years ago. so yes, people going out to eat yes, if they are on camera, they may choose somewhere else, may not try to kiss, or be romantic, or even propose, yeah those pesky cameras, need only to be at registers, and lightly at cars in parking lot, but if watching every customer, and employee, naw, I would stay away. I been with my wife 17 years, & not the person I won from bf, but a great lady I met while dating someone else. and everything clicked

Being a cook .. I understand needing a block between us and servers ... if you haven't lived it don't judge it ... if you are a server you know what you do ... as for a chef you know what you do..... thats why there's chefs and servers .. not a combination

I work in a very successful Steak house, why on earth would you have a "block" between servers and the chefs? Communication is key, at our steak house we are constantly bouncing ideas off of each other to improve the guests dining experience. We work as a team...

I stopped watching at 6:17. Of ALL the restaurants they had to critique, over and over and over, Outback Steakhouse? That place has been trash for over a decade! And in Florida? Florida is a “right to work” state. Don’t let that name fool you, it just means that you as an employee basically have no rights whatsoever and the courts, should you take a case in front of them will side with the business the majority of the time.

This is crap....bias against STEAKHOUSES because millennials dont like steak....so this may make you want to further boycott STEAKHOUSES. I managed restaurants for 20+ years.....crazy rules, toxic environments, unhappy employees, unethical employers is not just limited to steakhouses.....its everywhere in dining.....from Denny's to the independent owner to the fine dining, they all have severe issues.

I'm a steak house manager and I'm currently advocating the use of cameras in our bathrooms. There are legal challenges behind this but I believe we can make it happen and cut down on work place slackers.👍

the standard consensus among customers is to tip for involvement of work done sorry that's standard aptitude amongst more established people only if they a otherwise normal wait staff overall. if that's the case whatever tip you're entitled to is enormously small. there is obviously far more going on here but no sorry just reading a reciept is not the same as running around hell's half acre to serve my table being an established server in a higher tipped area is a privillige and so is being a customer I'm happy the customer reached out but not happy with the privacy violation of social media third party or no that's a bs weapon for sad people period. When a 55 year old man has to tell the current relevant generation to stop that crap you have a problem
