you should do a 1 time shop and a budget of 100.00 for the entire month. alot of seniors and younger adults only have this amount left after paying bills.

Another idea is to shop within the snap (supplemental nutrition assistance program, aka food stamps) allowances and use store sales/store digital coupons to stretch your budget. 🙂

I get EBT in California which is based on a sliding scale. I'm a senior who worked hard to support myself, and because I got sick and had to go on SSI (Disability) before I turned 65, my food allowance from the State is $26 per month. Stretch that.

In the book you could suggest recipes changes/additions like parma to the fresh potatoes in garlic/margarine sauce. This would benefit you in two ways, more video views on KZbin and the price of the ebook itself. This type of offering could be on Patron if that route appeals, general supporter and higher $ amount for more specific content like days 8+9. Just and idea…Best wishes?

One thing I haven't seen you do that has been a lifesaver for me is biscuits. They are the easiest bread to make. Cut 4-6 Tbsp butter or margarine (or any other solid fat like bacon grease or chicken fat) into 2 cups self rising flour. Add 3/4 cup milk (or water or any other liquid) and mix just until combined. Drop onto greased baking sheet or cut and place on baking sheet and bake at 400 for 10-12 minutes until golden brown. These freeze well. You can even store the flour mixture in the fridge or freezer and make just a couple biscuits at a time if you want: 1/2 cup flour mixture and 2-3 Tbsp liquid.

I've learned so much about cooking and budgeting from this channel. Let me throw in my beans and rice recipe. I ate this when I was unemployed and had very little money. Lucky I had bought a 25 lb bag of jasmine rice at the beginning of the pandemic, I stored them in pickle, and Mason jars. So for the rice, chicken bullion in the water. Way cheaper than broth, but still delicious. Then add fresh chopped cilantro when it's done. Then fry some garlic and green onion. Wash and drain black beans and add Chinese chili paste( or hot sauce) and a little fish sauce. Not too much it will be salty. Fry it up, and add lime. I had the rice. Cans of black beans are about a dollar. In Texas at the time I could get 5 limes for a dollar, and green onion and cilantro for maybe a dollar or two.

You saying about not wanting to focus on just one store for too long, I think it’s actually a good thing at times. There’s a lot of budget channels who showcase how to shop and save the most money when you have easy access to multiple stores, but some people live in food deserts or for whatever reason are limited to just one store the majority of the time. You should also definitely be prideful of the content you put out, it’s very thoughtful and a lot of hard work to do what you do and keep it enjoyable to watch.

I love watching your channel. I too am on a very limited budget. Retired early due to health problems so my. budget is tight. Would echo a lot of people asking for a second week where you use the leftovers and then spend another $21. I live rural and have a local grocery store and dollar tree as my shopping options. One thing I'd like to know --what you'd buy to build up your pantry with your rollover 'savings'. For me - it would be more flour, sugar, cinnamon and baking powder. I'd want to make cookies like Snickerdoodles. Also a jar of jam to use as a pancake topper. But would love to read what you'd do.

I was also really happy to see what you did with the beans and rice; as a vegetarian and as a person with a very tiny budget, beans and rice are important. And, just by the way, I live very nearby a space rocket testing center; I've gotten very accustomed to the windows in my house rattling and the ground shaking. Loudest thing I've ever heard: the Space Shuttle Engines; so noisy that I could actually feel the sound inside my torso. Not kidding.

You could make a hash using your hotdogs and getting 1 potato. Chop them into small cubes and fry until crispy. I make a low carb version using a turnip in place of the potato. Hotdogs are a great replacement for sausage. Great video 👍

@tcctocrazytccarson7309 turnips aren't sold there..that's true. But potatoes (frozen/canned) are. Dollar tree/general don't accommodate specialty diets (low carb/sugar/gluten free etc) very well. However, Wal-Mart does. If you happen to do shopping every 2 wks or monthly, it would greatly benefit someone with dietary restrictions to go to a grocery store.

Make a roux with your margarine & flour, add veggies. Then make your broth (soup base) from chicken bullion/ water. Add that. Make drop dumplings from flour, milk & margarine & add salt & pepper to dough. 2 cups of flour, 4 tbsp margarine 3/4 cup milk. Add some milk to soup broth, drop dumplings by the teaspoon full. . Add canned chicken?? Maybe?? Just a thought.. I know this isn't in standard recipe form.. sorry!! Keep cooking love!!😘✌🏼

love this series. with the left over bologna or hot dogs, you could have diced it and fried it and made your country gravy with it. i would love to see you add another week. you do such a great job and i have gotten so many ideas to help save on our food budget. i'm not sure what the price comparison would be, but 3 c. flour, 1/2 c water, 2 t. salt and 1/2 t. of yeast makes a loaf of artisan bread

Another hot dog meal…weenies and gravy! Seriously, a family favorite that comes from my great grandmother cooking during depression times. Eighth cut hot dogs and fry in a little oil until brown, add chopped onions and garlic if you have it and lightly brown, then add tomatoes, tomato past, and or tomato sauce. Add a little water, season to taste, and simmer until gravy thickens and serve over rice. It’s delicious and extremely cheap, especially if you have the veggies in your garden!

We have an old recipe that is similar. Instead of tomato sauce and paste, we put ketchup, mustard and brown sugar to create a thick, sticky BBQ sauce. We usually ate it with Kraft Dinner maccaroni and cheese.

when I was younger my dad would make my siblings and me a straightforward and cheap version of bibimbap which we called heaven: rice, hot dogs, fried eggs, hot sauce, and sesame seeds. This could be super easy to make for your series and can be eaten for any meal! I still make it sometimes into adulthood bc I view it as a comfort food

I bet eggs would be really good on those potato pancakes. Country gravy is also really great with eggs. I love the variety you managed this week despite only spending $21. Your videos have definitely inspired me to budget better and stop wasting my leftovers. Also, as someone who makes fresh flour tortillas often, yours look great! I typically use lard, but margarine definitely works if that is what you have.

Cutting the pasta with scissors could be a useful hack, but doing it right into the boiling water definitely just seems like a good way to make sure it's unevenly cooked. I'd think it would be easier to cut the pasta over a strainer, then you can put that in the boiling water. Add some frozen broccoli when you're making the sauce, and it's a decent take on cavatelli and broccoli, which is one of my favorite Italian comfort foods.

I like the idea of separating the mixed vegetables. I would have used the strings beans to make a small Shepards pie and instead of using hamburger I would have ground the hot dogs and added cooked beans, maybe made a gravy to mix with the hotdog and beans for my bottom layer. then did a layer of the string beans and topped with the potatoes and baked.

Great series Rebecca. We don't have Bologna here but millions of people can't be wrong, it seems like a very common sandwich there. One thing I was expecting was when you roll out a slice of bread thin and wrap it around a hotdog and brown it in the pan and serve with mustard.

This was a great series! I live closer to a Dollar General than any other store, and it always amazes me how many groceries I can get there, especially on a budget. I also appreciate the Polish cooking and would like to see more of that, maybe using easy to source and thrifty substitutions.

Rebecca, Mike and the rest of my dollar tree huggers. The mind set of saving and putting aside for a rainy day is a difficult one to get rid of. Often I catch myself saving things I don't need hehehe. Rebecca, I may have an idea for a video you might want to do. Back in the 90s it was a very hot day and a neighbor invited us to swim in their pool. There were 3 households and we were talking about dinner. I suggested that if they wanted to clean out their refridgerators we could pool that food and anything else they wanted to use up. We had leftovers of all kinds, potatoes that were going soft etc etc. I took the leftover chinese food and made my own dumpling wrappers (like the dough you made) for assorted dumplings. Leftover steak and pastries for sauerbraten. I roasted the oldish potatoes. I hope this can be a useful idea. Jim Oaxaca Mexico

Look in the Mexican foods dept at the store. You can often find huge jars of bullion for about the same price as the small jars in the soup aisle. They also offer more flavors. The chicken tomato is really good.

Instead of potato paddies that you made, I think it out with some milk and make waffles. They freeze well and you can put fruit, syrup or gravy. Have had them my whole life and at over 70 I have had a lot of them. For green beans, save your bacon grease and fry the green beans with a little garlic powder, fry until you start to get brown specks.

Another recipe to look out is traditional spaetzle. It’s a loose dough, almost pancake batter consistency, made with eggs, milk and flour. You can use a colander and push the dough through the holes or sort of scrape it off a wood cutting board into boiling water. Then boil it and you can pan fry it. This was a super fun video and loved all the different recipes and techniques you used. I’m also polish so absolutely loved the pierogis.

I’d like to see you visit your local food bank, take what they give you, and then supplement trying to use their items with a shopping trip with however much you are assigning yourself that week. Or pretend you have two kiddos and cook for all three of you. Or show the items that would be stocking your pantry with as far as spices, etc. that people can be using to jazz up their cooking. Or I’d like to know what to put in a gift basket for someone on a tough food budget - oils, spices, sauces, condiments, etc. PS: Would a different meat be better than hot dogs? Like corned beef? SPAM? What can we give to people who are really struggling? What are the things they can’t buy on a restricted budget? I’d love to see a second week. These are great!

I don’t know if you do it in this video but in case you do see this, I thought perhaps you could talk about why you put your sheet pan on the bottom of your oven. I have seen several other videos lately. That sort of explained it, but thought you could add that to your video. America’s test kitchen said it helps with browning, but then allows the top to steam. I have always put my tray near the top or middle.

If you had some vinegar you could have made a very small amount of chesse with left over milk. Instead of 2nd bag of veggies a bag of frozen fruit if comparable costs. Personally i wouldnt have gotten chips maybe rotel, canned tomato, or frozen onion and peppers for flavor. You can make tortilla chips from the tortilla if you want something crunchy. Someone mentioned using beans in place of beef for a shepards pie. That could work if you had beef boulion and im guessing pulsed the beans and add some flour for texture. Ik a lot people are not a fan of ramen buts super cheap, usually 5 packs for 1.25. When im tired and dont feel like cooking i make ramen and an egg and peas or corn whatever i have on hand. I think this video was really good for such a small budget. It also is good for those who unfortunately live in food deserts.

I just found your channel today. I watched part 1 and 2 of the $50 walmart videos, and loved your ideas so I sudscribed. Then I watched the thanksgiving from scratch one. There went my schedule for today, but it was worth it. I'm really glad I found you.

One of my favorite meals using mixed vegetables is a knock off of Olive Garden minestrone soup. I always make sure I have enough diced tomatoes in my cupboard along with some of that lovely pasta that you made by hand you can really tweak this to your individual tastes by adding herbs That you like, and as an extra boost, a half can of the cannelloni beans it makes a lot of servings. So if you’re on a budget, this is a great recipe. I love your channel. Thanks for all your hard work.

I have enjoyed watching your videos. You have some great tips, and good ideas. In this video where you made the homemade pasta, I don't know if it would help, but I'm wondering if maybe cutting the pasta separately, so when you're ready to use it, and then try dropping it in the water. You did really great making the pasta though. I'm going to have to try my hand at making homemade pasta. I used to have a pasta machine, I eventually gave it away. You definitely are one articulate, and smart adaptable lady. Thank you for always doing these videos. Blessings to you, and your family.

I really enjoyed these three videos. Having been in a situation where I lived like this, the one thing I always bought was Dehydrated Onions. Cheap, flavorful, and adds texture. Other than that, what you did was perfect.

That DT frozen grilled chicken sandwich you mentioned in other videos is so good! 👍👍 Thank you for taste testing DT foods for us. When I microwaved mine, I just cut the cook temp back some so it wasn’t quite full blast. I think it microwaved better that way. (70 or 80% cook strength is what I did)

the potato pancakes you made are really similar to something we make in Scotland called tattie scones- it's basically the same recipe but you swap the eggs for margarine/butter, could be useful for a future budget challenge you happen to do?

I would love to see you maybe sometime do a meal plan like this, but for people with chronic pain/exhaustion/arthritis/etc, with recipes that don't take a lot of difficult chopping, etc, for preparation and cooking! The foods you make all look so delicious, but a lot of them look like more than I can handle doing, especially 3 times a day on the regular, with fibromyalgia. Thanks for all you do with this channel, and keep being awesome!

This has been fun to see what you came up with. I really enjoyed going through the week with you. Now seeing what you have left shows me you could have ate a little more healthy with protein and veggies. For myself I would have had to do that. Because of my health if I would have ate like that for a week I would have been very sick. Adding the extra protein and veggies each day might have helped. Please be careful when you do these extreme budget weeks. Your health is important to. We love you and we want you to take care of yourself 🙂

About the leftover veggies! When I’m out of lettuce/tomato garnish for tacos I’ll put frozen or canned veg in with the protein and cheese-the colors are more appetizing, and it’s lighter on the stomach. Same with enchiladas, I always put corn or mixed veg in now.

Our family makes a similar meal of cut dough into boiling water. A trick my mom taught us girls (5!) is try to snip them into a pile which helps avoid splashing. It is difficult to keep your hand away from the heat, just pause for a second or two.

So many great ideas. You really stretched that $21 and had great variety. Well done! We have always made potato patties with leftover mashed potatoes. You don’t need to add flour or egg; just the mashed potatoes. Put a little oil in your fry pan, add your patties and get them brown and crispy on both sides. In another pan fry up some eggs. We like our over easy. Top each patty with an egg and you’ve got a delicious and quick breakfast.

Absolutely love your content! Could you maybe do a weekly budget with only microwaveable meals? I’m a college student, and a lot of people I know only have a microwave to cook with in their dorms. I personally only have a microwave and air fryer, but I would love a microwave only meal plan.

Love the potato pancake recipe. Brings back a couple memories. Your potato pancake recipe actually reminds me of potato cakes my dad would make as a side to use up leftover mashed potatoes and we would eat as a side with a meal. Growing up, my dad would shred the potatoes for potato pancakes, so im used to the texture of them that way. Thanks for sharing!!❤

In the past, I've used potato gems as an substitute fpr normal potatoes for soups. It does a great job of adding salt and oil into the meal as well.

It’s funny you mentioned those explosions because we live in a town that has underground storage caves, and they are constantly blasting to make them bigger and every day at 3:30 we hear at least two explosions sometimes more, and they are supposedly very far away but they often rattle our windows and scare my dogs

Tasty beans & rice with veggies, maybe meat or meat substitute (hydrated soy bean textured veg protein) or added peanut butter is a great favourite. I also love adding soaked oats- yum. Chilli powder & tomato paste too. Add diced cucumber or shredded kale & diced red onion. Top with yoghurt. A favoutite meal of mine. Even leaving out some of these ideas when i am too busy produces a yummy food bowl.
