I change all the fluids, grease, lubricants first before I fire an engine. Also, I recommend to sent your engine and tranny oil for sample analysis prior to running. Scope the cylinder bores with a camera as well to check for any water damage, and any other fill/drain hole you can get the camera into.

First take it apart and clean it very well, change fluids and then start it up. Liquids can go into the combustion chamber and give hydraulic problem and the end of the engine.
