Vinegar with Cucumber and Wakame Seaweed (Sanpai Vinegar)
Ingredients
1 cucumber
3 g dried wakame seaweed
A pinch of salt
<Sanpai Vinegar
2 tablespoons (30ml) vinegar
2 tbsp (30ml) light soy sauce
2 tbsp (30ml) mirin
How to make
Soak dried wakame seaweed in water.
Cut cucumber into thin rounds.
Place cucumbers in a bowl.
Add a pinch of salt and mix gently.
Let stand for 5 minutes.
Make the sanbaizu.
Put the mirin in a heatproof bowl and heat in the microwave for 1 minute.
Put the vinegar, soy sauce, and heated mirin in a bowl and mix thoroughly.
When the cucumbers are soft, drain them.
Drain the water from the soaked wakame.
Combine cucumber, wakame, and sanbaizu vinegar.
