Yes unfortunately. The new themes aren’t bad but they are really underwhelming compared to these legendary ones. Some say it was changed cuz of licensing and some say it was changed cuz of the composer getting into controversies and stuff. Either way it really sucks these tracks aren’t in the remaster. Kinda the only downside of the remaster in my opinion.

There could be a space for both explanations, that they were humans turned zombies via demonic infestation, ala "Evil Dead", but considering that the other zombies act similarly, without demonic influence, this is less likely via Occams Razor. They came from rotten world via summoning and explosives, but that does not deny them an origin in our world, Rotten world is a realm for "Demons AND the undead", which means zombies could conceivably go there and come back.

To answer your question about the bosses, it's because SUDA51. In all of his past games, all the characters were based off of someone or something famous (Destroyman for example). Because of this, all of the characters in this game were all also based off of someone famous (Killabilly = Elvis). The music based enemies is likely in relation to the plot of Swan's feelings towards Juliet (Zed being on what he wanted to say about her because she's dating Nick instead of him) and song being the mood.
