I made this yesterday and it was delicious. My family loved it. I didn't have the cake ring and the acetate. So I just traced round 9 inch round pan on the chiffon. I also used the springform pan and it worked. Thanks for the awesome recipe

Thank you for another delicious recipe Kurt! A great tip for keeping the cake from sliding around whilst you’re constructing it is to smear some frosting onto the cake stand then place the cake base directly on top so the frosting acts as a glue to keep it in place. I found this very helpful for beginners like myself :)

Hi Kurt! I love the recipe! I made it for a baby shower but i wasn’t able to bring it because the frosting slid on the side the next day. But that’s my fault. I tried stabilizing it with gelatine and iced the sides then added mango puree to achieve a drip effect but it made the frosting runny. Thanks for the recipe!

I substituted the mangoes with frozen ones. Oh I’m really loving all your baking😍. Hi Maricar. I demonstrate how to make a Swiss Meringue Buttercream frosting it my video for Choco Mocha Crunch Cake. If you're using it for the Mango Supreme cake, just ignore the part about coffee and chocolate if you don't want it flavored, and finish after adding the cubes of 1 lb butter (same as 2 cups of butter) and 2 tsp vanilla extract + optional lemon/orange zest (instead of 1 tbsp vanilla extract like in video) - you can stop at the 7:17 mark. Hope this helps! :)

Totiana Scott Hi Totiana! For a smaller cake, I’d recommend using 6 inch round cake pans, and literally dividing all the wet and dry ingredients by 2. That should make a batter that fits well into a 6-inch round pan. Hope this helps! 😊

CookingwithKurt Thank you so much for responding and your help. It came out wonderfully. The only things I had a problem with was I felt that the lemon/orange zest overpowered a bit. (I may have put too much) I also baked the cake a little too long and it wasn’t as spongey as yours looked lol. I’m not sure if it was the pan that I used that cooked it too long or if 23 minutes was just too long of a time for my oven. I am so glad I tried it though and now know how to adjust moving forward. Hi Janice - thanks for your comment! 1.) Yes, you can use frozen mangoes. 2.) The step of cooking the mango slices with sugar is supposed to prevent oxygen from reacting with the fruit (and oxidizing it which creates a darker color) - cooking the mango slices briefly with sugar should stop any enzymatic browning when it is stored after. Be sure to tightly cover the pre-made mango with plastic wrap to minimize exposure to air. Hope this helps! :)

Hi Anne, thanks for your question! Yes, you can make this in 2 round pans instead. You can just make a 2-layer cake, or cut the rounds in half horizontally to make a 4-layer cake. When making it in a round pan, the rounds may shrink a little when they cool. So it might be more difficult to use the cake ring + acetate sheet method to make a naked-layer cake with straight edges. Hope this helps! :)

Hi May. You can make it without the cake ring and acetate sheet. You'll just have to manually assemble the cake. The edges might not be as straight as with the cake ring/acetate, but it will still be delicious! :)

Hello, thanks for your comment! And it's nice to hear from you again :) You can absolutely use individual round cake pans for the mango supreme batter if you'd like. The reason I used the rectangular baking sheets is so that the final cake has perfect straight edges - this is the technique for “naked layer cakes”. There is no frosting on the sides to hide uneven edges. When you use a cake ring to cut the rectangles into circles after the cake has cooled (like in the video), the edges remain straight and sharp. When you use round cake pans, the round cakes inevitably shrink a little when cooling as they pull away from the cake pan walls. And so the final cake may look just a little bit uneven. But it will still taste delicious! I personally eat all the leftover scraps, so no yellow chiffon cake is ever wasted. Hope this helps! :)
