Assalamualaikum all my friends
today I will cook quail, a bird with a unique sound and a mini shape and has eggs with cute motifs.
I will cover the quail with the red seasoning that comes from Angkak, Angkak is rice that has been fermented,
You can get Angkak at cake ingredients shops or grocery stores.
let's take a peek at the ingredients.
INGREDIENTS :
10 quails, clean and keep shape intact
soaked in water with lime juice 30 minutes.
SPICE :
8 cloves of garlic
8 shallots
8 grains of hazelnut
1 tbsp pepper
1 tbsp coriander
turmeric
ginger
galangal
1 piece of nutmeg
all the spices are pureed & stir-fried
WHOLE SEASONING :
lemongrass
Bay leaf
lime leaves
deaf / star anise
capulogo
3 tablespoons of Angkak: Soak in warm water
salt
powder broth
mushroom broth (if any)
Cooking oil
fresh vegetables
