Making the world a better place one cookie at a time. I think the cookie kits are the best thing, it's really great and such a nice way to still get people sweets but also getting them more active in the kitchen. I know I've been doing an awful lot of baking, mainly because baking helps me sleep when I'm under a lot of stress. It isn't the eating part but the baking part that puts me at ease. But feeding people is kinda the only way I know how to express affection. If I feed you, I love you.

Hello all my Americans 😬 I tired this and it took a couple of trial and error but for me baking at 360 for 13-14 min was perfect. I tried 400 and 375 but the outside was wayyy to crunchy. Hope this helps anyone trying to bake 🙃💕

I did a couple years of pastry arts in college. I actually had to tell my professor that Red velvet isn't vanilla cake with chocolate, it's chocolate cake with white vinegar, he discovered it to be true in other pastry books in the college. Surprise surprise. The vinegar gives it the famous red velvet taste, the difference of the flavors are obvious between red velvet and chocolate. If your not putting vinegar into your "red velvet pastry" then it's going to only taste like chocolate. The vinegar alters the flavour of chocolate it's a reaction that actually changes the way chocolate tastes altogether giving it that famous red velvet taste, science. I wonder why so many people don't know this, everyone has to know this. The countless times I've had a red velvet cookie from bakery's and they just taste like chocolate lol. Even little Debbie's do it correctly with white vinegar in there red velvet treats ingredients 😂

I made this yesterday and my god were these delicious! They’re so decadent, chewy, and gooey! I replaced caster sugar with white sugar, cooked it at 350 deg for 16 mins and it turned out sooo good! They will set once they cool down, so don’t worry about it appearing raw.

OMG! I just made these but made them about 70g so I got 22 from the recipe which is still a generous cookie. The taste is incredible!! I had to watch them as they baked and they burned a bit on the bottom. I’ll use the convection fan next time to see if that makes a difference. I still have 20 in the freezer!!😋🍪👏🏻🎄

I just made this cookies today, and it turned out amazing. It's so good!!!! Thankyou for the amazing recipe ❤ I made it using an electric hand mixer, and since i lived in a tropical country the butter did melts pretty quick during the process so we do really need to work extra fast to prevent it entirely melted. Thankfully, the results are still amazing. I just pop it to the freezer for about an hour and can't wait to try it so I just bake it. Definitely will bake them again soon 🥰

Baked these and the taste is AMAZING! My friends are raving. One question though. I followed the recipe. However I noticed that while the center has risen while in the oven, as soon as it cools down, the center flattens. Not sure if it's due to our (very humid Asian) climate, or the butter's fat content perhaps?

I’ve made these! They taste amazing. I used Sugarflair Red Extra concentrated colouring paste and only needed 0.5 tsp to get a dark red colour. I also had to whisk it into the eggs quite vigorously for a couple of minutes as the paste was very thick, but I managed it. It’s a shame we can’t get yogurt chips for baking here in the UK because they’d be a great substitute for white choc chips in this recipe!

I have a question sally what can I substitute mascovado sugar and Marmite with because I don't have any of those here in Egypt, like what can I substitute yeast extract with or malt things?? Thank you so much ❤️

for muscovado sugar, you can just use any brown sugar that you have, but keep in mind the final product maybe a little sweeter. i would suggest adding more molasses to the brown sugar to mimic the flavor of muscovado sugar more.

This is more chocolate than red velvet, just using regular cocoa. I made a batch yesterday, adding in 1.5 tsp of white wine vinegar and it still just tasted like chocolate. I'm reducing the cocoa by 1/3 (adding back the same amount of flour). Didn't notice any difference in texture (I've made other "NY" style cookies) by adding this small amount of liquid, so I'll use 2 tsp instead of 1.5. Also used less white bits because I stuffed these with a coconut filling.

I'm unfortunately not part of the C&D team but I am a fellow baker and I frequently bake vegan desserts for my friends and clients. Here's some info for you... There are various egg substitutes out there that you can buy. I haven't tried them with this recipe before but based on my use of them in other baked goods, I'd guess they'd work fine in these recipes. Just Google "egg replacer powder" and several will come up that you might be able to find in your local grocery store or you can order online. Hope this helps!

There are various egg substitutes out there that you can buy. I haven't tried them with this recipe before but based on my use of them in other baked goods, I'd guess they'd work fine in these recipes. Just Google "egg replacer powder" and several will come up that you might be able to find in your local grocery store or you can order online. Hope this helps!

I've made all the NY style cookies now and rarely do mine turn out right. I've adjusted baking time for a non-fan oven, used different trays with different cookie sheets or baking parchment, played with shelf height etc, they're either raw in the middle, or if I leave them in longer to bake the middle then the bottoms catch and start to burn. I even tried lightly pressing them down a bit halfway through cooking so they're thinner, no joy...I give in...🙈

This has been my experience too. After baking, the cookies are just slightly rounded balls. I am very careful to not overwork the dough and I just press the cookies together, but still...round semi-cooked "snowballs". Help Jemma!!!

Have you tried making them smaller perhaps? I think 125g is quite big for a cookie. I make regular choc chip cookies half the size, and they bake for the same time when frozen.

Tiffany H. Quick thing I do is halfway through the cooking, i get a spatula and flatten them to my desired shape. And it stays that way until it’s done. Works everytime :)

I baked the cookies! The taste is amazing! Still I need to work on the baking time since my oven has no fan. So the cookies didn’t spread as much as the should and maybe I need to add little less of the dark cocoa to get a better red 😂. Also the eggs were not as large as suggested... so next time I expect perfect results 😆, but again those cookies are soooooo yummy

I love these! BUT: can anyone explain to me the red velvet hype thingy? I mean, you don't need the red colour in these cookies, or in the cupcakes, or cake, right?

I'm a baker and I don't even understand the hype. I think people truly just like the color and the name. It looks and sounds luxurious. Red velvet cake, or any velvet cake, usually has buttermilk in it which gives it a very slight tang and makes it really moist. Other than that, it's just a cake that has both chocolate and vanilla in it. I can't tell you how many people have told me that they either don't like vanilla cake or they don't like chocolate cake but they claim they LOVE red velvet (of course they don't know what goes into it). Don't get me wrong, I love the color of it, the flavor is good, and the texture is nice but people have been way too easily won over by the clever addition of an eye-catching color combined with a luxurious-sounding name.

So two versions of the the story goes , Originally the coco powder would turn the cake red, the second versions is a American was looking for ways to sell his red food colouring, so invented red velvet cake. Tho it’s not exactly a chocolate cake, as the buttermilk and vinegar gives it a tangy taste.
