Resep Bolu Gulung Red Velvet tanpa SP atau pengembang, hasilnya lembut sekali.
Bahan-bahan:
60 gr atau 3 kuning telur besar
2 sdm gula
1/2 sdt garam
1/2 sdt vanilla (saya pakai yg bubuk merk La'rome)
50 gr terigu kunci biru
1 sdt coklat bubuk
1/2 sdt baking powder
35 gr susu cair
35 gr minyak sayur
2 sdt pewarna merah makanan
Meringue :
100 gr putih telur
2 sdm gula
1/2 sdt cuka
Cream cheese:
100 gr whipped cream
200 gr cream cheese
2 sdm gula bubuk
1/2 sdt vanila
Cara buat:
Masukan kuning telur, gula dan vanila ke bowl dan aduk rata.
Masukan minyak sayur, garam dan aduk rata
Masukan dengan di ayak terigu, bubuk coklat dan baking powder, lalu aduk rata
Masukan susu cair dan pewarna merah makanan lalu aduk sampai merata semua.
Di bowl terpisah mix putih telur, setelah 1 menit tambahkan cuka dan gula, lalu mix sampai meringue jadi, jika dibalikan bowl nya putih telur tidak tumpah.
Masukan 1/3 meringue ke adonan kuning telur, aduk perlahan satu arah, proses ini dilakukan 3 kali.
Masukan adonan ke loyang ukuran diameter 24 X 30 cm yang sudah dilapisi baking paper.
panggang di oven yang sudah dipanaskan terlebih dahulu pada 160°C (320°F) selama 15 menit,
Sementara baking, kita bikin cream cheese nya, campur whipped cream, gula bubuk, vanila dan mix sampai merata, lalu masukan cream cheese dan mix lagi sampai tercampur rata.
Setelah cake matang, keluarkan dari oven dan diamkan sebentar sampai uap nya hilang atau agak dingin suhu ruangan, lalu olesi cream cheese dan gulung perlahan, simpan di kulkas selama 1 jam agar set.

Red Velvet Roll Recipe
Ingredients:
60 gr or 3 large eggyolks
2 tbs sugar
1/2 tsp vanila
1/2 tsp salt
50 gr cake flour
35 gr milk
35 gr vegetable oil
1 tsp cocoa powder
1/2 sdt baking powder
2 tsp red food coloring
Meringue ingredients:
100g or 3 large eggwhites
1/2 tsp vinegar
2 tbs of sugar
Cream cheese:
100 gr whipped cream
200 gr cream cheese
2 tbs of powdered sugar
1/2 tst vanila
Method:
Beat egg yolks, sugar and vanila in a bowl, then add in vegetable oil, salt and mix well
Add in shifted flour, cocoa powder and baking powder, mix well
Add in milk and red food coloring, mix well
Prepare meringue:
Beat egg whites in a separate bowl, after one minute add in vinegar and sugar, then continue beating until firm glossy peaks form.
Meringue is ready if you tilt the bowl, the whites should not slide.
Immediately combine 1/3 of meringue into batter, fold gently in one direction, do this process in 3 batches.
Pour into baking pan lined with baking sheet, bang the pan few times to release trapped air
Bake in preheated oven at 160°C (320°F) for 15 minutes
While baking, let's prepare cream cheese, combine whipped cream, powdered sugar and vanila in a separate bowl, whisk them, then add in cream cheese and mix well.
once cake is baked, let it cool for a while, spread cream cheese and rolled gently, store in fridge to set for 1 hour
