This week on Good Chef, Bad Kitchen, Top Chef finalist Adrienne Cheatham roasts chicken in a bare NYC apartment. She attempts to whip up a savory soy-basted roast chicken in an under-equipped space. Press play to see how she manages this meal!

Adrienne Cheatham's Soy-Stout Roasted Chicken
Ingredients
For the chicken:
1 whole chicken (3-4 lbs)
Salt and pepper to taste
1 1/2 cups soy sauce or tamari (gluten-free soy sauce)
1 12-oz. bottle of stout beer, like Guinness or Old Rasputin
1 tablespoon Red Boat fish sauce
2 cloves garlic
1 bunch scallions, root ends trimmed and cut into 2-inch pieces
3 stalks celery, trimmed and cut into 2-inch pieces
12 large shiitake mushrooms, stems removed
6 large King Trumpet mushrooms, trimmed and cut in half lengthwise
Grapeseed or canola oil for brushing
For the garnish:
3 cups reserved chicken brine
2 tablespoons unsalted butter, cold
1 medium daikon radish, peeled and cut into 1/2-inch slices
12 - 16 pieces baby bok choy, with the outer leaves trimmed
Instructions
For the chicken:
1. Rinse chicken and pat dry. Using kitchen shears or a sturdy knife, remove the backbone and cut lengthwise between the breasts, cutting the chicken in half. Season the chicken lightly with salt and freshly cracked black pepper and let sit for 10 minutes.
2. Meanwhile, combine the soy sauce, beer, and fish sauce in a large bowl. Peel the garlic cloves and crush with the side of a knife. Add garlic and cut scallions to the bowl, then the chicken halves, plus the backbone, skin side down.
3. Marinate the chicken for 2-3 hours (longer is possible), turning occasionally.
4. Preheat the oven to 475 degrees F.
5. Prep and season the celery and mushrooms with some oil, salt, and pepper. Arrange the seasoned vegetables on a half-sheet tray.
6. Remove the chicken from the marinade and place in the center of the tray, on top of some of the mushrooms, skin side up. Rub a drizzle of oil over the skin. Strain the marinade, reserving two cups. Place the scallions and garlic on the tray with the chicken.
7. Place the tray on an upper rack in the oven to cook, roasting for 30 to 45 minutes, or until the juices run clear.
For the garnish:
1. In a small pot, add 2/3 cup of the marinade with some water and the daikon. Bring to a simmer on medium heat. Turn heat to low and continue cooking until daikon slices are tender and translucent. Drain and set aside.
2. Place remaining marinade in a small pot and bring to a boil on high heat, whisk in butter. Add trimmed baby bok choy to the pot and cook until just tender. Drain and set aside.
Assemble
1. Remove the chicken once fully cooked and let rest for 10 minutes. Then, carefully carve the chicken out. Arrange on a plate with a few pieces of daikon, bok choy, and roasted mushrooms, plus a drizzle of the reduced marinade. Eat the backbone with your fingers.

My husband is an Executive Chef and this has happened to him so much that he travels with his own kitchen supplies. When we're out of town traveling or just visiting friends we always have his knives and other cooking staples conveniently located in a special area of our car. It's really great when we pick up breads, fruits and veggies at a farmer's market. After doing so we drive down to the beach, do a little set up in the back of our car and it's an instant snack, lunch or dinner right there. We love doing this and we enjoying each other's company. Cooking is our way of life. We wouldn't have it any other way.

Dol _ : Lol. Your cute! You can be just as lucky. I've found a lot of people are either intimidated by what cooking is or they just haven't been exposed to it enough to really know. Both my husband and I cook, but we deal with different spectrums of food and drink. I work with different teas, honey and pastries where my husband specializes in high end, exotics and kitchen management. I would suggest taking a few classes. Maybe check out assistance in obtaining pantry staples and the basics of what one needs in a kitchen to start out with. Another helpful idea is figuring out what you love to eat and drink. Are you a vegan, vegetarian or carnivore? Do you require a special diet or on a diet? What do you enjoy eating? Example: my husband is obsessed with hamburgers. When we first started dating I took him out and he orders a hamburger. I told him I could afford more and he didn't have to be cheap about what he wanted. He told me straight up "I like hamburgers!" Little did I know he wasn't kidding. He's created an amazing burger menu over the years that blows our clients mind's. The veggie burger he created is to die for and our meat eating friends request it quite a bit too. If there's something out there that you really love to eat make it your own and then share it with the world. Anything can be improved upon and old can be transformed into exciting and new. Really give it some thought and take it from there. Food is fun, not scary. A little research in the area you live and work in will surprise you when it comes to culinary resources. Explore and discover. You've got this!!

I like her! You can tell she really enjoys cooking and she's not pretentious. She was able to pull off a chef worthy meal in a extremely poor kitchen apartment. Amazing!! Plus when she was cooking the meal she made it look super easy.

I LOVE that she washed the chicken! As long as you maintain a clean working space there is no reason not to wash your chicken. I’m Caribbean so we go further after rinsing with sour lemon and vinegar. Will try this recipe though.. looks amazing. I would add some white jasmine rice as a simple side. That chicken looked amazing!

Many high end chefs say washing is not needed in any way. Cooking kills everything. Ever see how food is made in India, Philippines, Vietnam at the street. Strangely, the population is increasing, not dying off due to not washing. Cooking aka HEAT kills bacteria.

I was thinking the same thing!! I have tried peeling celery in the past, but those veins go on forever. Chef Adrienne did it with such ease.

Wow! Nice video. Very professional chef . I immediately subscribed. Good tip on sharpening the knife. I find that a good quality sharp pair of scissors is a great cutting and trimming tool in the kitchen. Chicken looked perfect. Great skin. Presentation was spot on minimal using the food and pan juices like a Picasso floral. No bs . I love watching a pro. Thanks.

Diana Nunez I sanitize the sink before I put any meat inside of it and then again afterwards. I make a solution of part bleach, vinegar and lemon juice and make sure to keep everything away from the sink while I have meet inside of it. But I agree, I wouldn’t do that in someone else’s kitchen unaware of how they generally keep it clean.

I was thinking the same thing!!! Then I had to remove that thought from my mind and just tell myself that Chef Adrienne did in fact clean the sink it's just stained that way. There was nothing she could do about the soap scum stains. Oh I hope that was the case.
