I have been given a reflective essay to do and its about metacognition, motivation and I am not sure wether should I write two separate paragraphs or one paragraph and write about both theories such as metacognition and motivation.

Each paragraph should have 1 main idea. You have two, so 2 paragraph unless they are somehow related. Even if they are related, I would have 3 paragraphs where the third just kinda mix them together.
