That graph is great... the reflow temp window I quite forgiving, 5 deg C out is fine. You have a lot of glass on that door.. maybe putting some thermal seal around the edges might give you a bit more insulation, but honestly, that graph was awesome. I'd disconnect the TC from the PCB and have it flowing underneath the PCB instead. It would make putting boards in and out easier.
