He seems content to run his own bakery and business, i don't think asians feel the need to go to a western country to work in order to feel accomplished. Of course i know your comment came with good intentions and maybe just for comparison of his skills and capability, but from another perspective, it comes off as kind of self centered because it isn't always about you or your country.

I never implied he should come to a western country to "feel accomplished", I was saying that he is better than most people in western kitchens and if he ever came over he would get a job instantly. I don't see how anyone could take offense from what i said... and apparently neither does anyone but you. I wouldn't read so much into things that are quite clearly a genuine compliment.

He does exactly what all the bakers been doing since 1920. Before that they started even earlier. Because of a law of that year, they weren’t allowed to start working earlier, and that’s why baguettes and bread are more little now

Simon WoodburyForget if you know the argument is pointless then why start it? Don’t be so snobby and academic when it comes to judging careers. One is a science, one is an art- both are meaningful in their own way. I think most people know how hard an engineering job is, but to my point I don’t think many people really appreciate the difficulty of a humble career like this baker has. He works even though he knows a factory could do his job, because he loves what he does and knows he can do it better than a robot.

He is very productive, that is for sure. I've done similar work for an Italian Bakery however, they insisted in doing it the old way. Everything was done by hand and to be honest, I don't believe it was much better than what I just watched being done in the video. We certainly didn't have the variety he has here. Croissants??? In an Italian Bakery. Jamais! It took us hours to accomplish as much as he did in perhaps 4 hours. Automation, modern equipment, organization = productivity. Well done.

You agree that it was better, albeit slightly, but still better. It was not your name above the door. The man who's name's above the door, whose trade, reputation and your employment depends on the production of good quality. When it is your name above the door, then you can cut corners. I remember walking through Paris once while visiting my son, we passed a queue of people at least 25m long waiting on a small bakery to open. Must have good bread, says my son. There would have been cheaper bread available in the supermarkets, but people were willing to stand in a long queue to buy the good bread. Whether that baker made use of mixers, I do not know. You now have the knowledge of how to do it properly in your hands and your mind. If the arse falls out of the world and it's increasingly looking that it might, you have the knowledge of how to bake bread without electricity. I remember the first time I took Second Son, I hope he is happy, out to fish on a boat. He sat down at the outboard. On the oars, says I. We have a motor, says he. When you know how to row, then you can use the motor, says I. When the motor breaks down and it will, you need to be able to row the boat. You know how and are able to bake bread without the aid of an electric mixer. Not just one loaf, but a bakerys' worth of bread and confectionary. You, Mario, are one very lucky man to have been able to learn skills like that.

@@snipper1ie What an interesting point of view you present. Hadn't quite thought it to be so precious a skill as you seem to imply it to be. It is a good thing isn't it? When people present different points of view, and give an alternative way of looking at the same. You don't really believe we would get to the point when we would not have electric power to run our modern equipment, do you? Perhaps you need to turn off the TV, and stop listening to the alarmist Media. Let's not be that pessimistic. We, I mean the human race, has survived worst things, haven't we? It is just a virus. It was bound to happen. How else are we to have Natural Selection, without wars or viruses? I still make my own bread at home, and I still make it by hand by the way. I do use a gas oven to bake it. I know of places where people use wooden stoves. I myself have used them in the past. Can't really say they were any better. Perhaps my taste is not as refined as that of others. I do make my own pizza at home also, and that, I must say, I have yet to eat a better one anywhere, not even in New York which they say, has the best pizza in the world. To my surprise, I didn't like the pizza I had in Italy. Perhaps just a bad choice of place to eat one. Anyway... I hope your son never loses his oars, before he has a chance to learn how to use the motor. Then he would really be up the creek without a paddle...lol Have a Happy Easter. B-Good!

@@mario9133 I have just finished making 1Lt of wild garlic pesto, that should do me to next year, then again, it mightn't, better make more. No, I'm not spending my time looking at the scrolling bad news and how sensational a spin they can put on it. But, this thing is bad. It's new and running rampant. We will all get it some time in the future. Our hospitals aren't able to cope with it now, because it's new and there are thousands getting so sick they need hospital treatment. In future times, when we get it in dribs and drabs the hospitals will be able to cope. It doesn't take long for society to break down. Didn't you see them fighting over toilet paper a month ago? Those skills you learned are precious and you should pass them on to the next generation, otherwise they will be lost. They took generations and hundreds of years of trial and error to perfect and you possess that knowledge. Unfortunately, second son decided to leave this world and rowed across the Styx on his own. My mother would daily bake soda bread in a Dutch oven over an open peat fire. The best bakery in the world will never come close to the taste of that bread. Pass your knowledge on.

I wonder what it would taste like as a topping to my most excellent pizza. We might be on to something. I am not sure where to find it however. Do you plant your own? Perhaps you have your own vegetable garden on your yard. I wonder, would it grown on a big vase, the kind I use to grown my Basil? That also makes a wonderful pesto. Isn't it amazing how little people really do know about culinary. How sad. So much to eat, so little time, and why not say... such small stomachs. You made me laugh.... "people fighting over toilet paper"? No... I didn't see it. Where? Here, in the US? But then again, I really don't watch much TV or the News. I'd rather read a good book, watch a good movie, play the piano, cook some good food while listening to some good music, do some sculpting with clay, or similar material, carve some wood, etc... You get the gist. After school and all the rest, I really don't have a lot of time to be listening to all that non-sense. Well.... non-sense to me. I am sure it is very important for some people. I believe in the old Spanish way of thinking... "Que será, será!" Did you learn to make your mother's version of soda bread? Do you still make it? To be truthful, it is something else I don't remember ever eating. I have always thought of it as an Irish traditional bread. Not many Irish places here, where I live. Come to think of it, I don't think I know anyone Irish or of Irish descent. What extraordinary times we live in. B-Good.

Not surprised about anything Japanese. It’s their work culture, pride, attention to detail and the expectations of their clients. What’s a little different than here in the states is the smallness of the breads and the dividing of whole loaves in half for sale. Also, the combo of breads and prepared sandwiches and savory loafs for sale. Ingenious!

I worked in a bakery many moons ago. Got into the flow. Had an internal timer to the minute. Very handy, and didn't interrupt the radio with any buzzer. This baker is a good step up from what we produced. Hat's off.

Awesome!! I am very much appreciative of the sincerity and devotion of these Japanese and German people. We Indians will take thousand years to reach their level of perfection, by the time they will become another species. God bless these hard working people..

Wow! So much knowledge of so many different bread forms and recipes. Never looking up a thing, just knows what has to be done and at every step. It’s like a beautiful choreography, dancing between each different type of bread, proofing this, shaping that, baking another, keeping the ovens turning around. Amazing!

My first job when leaving school was a baker and confectioner and it’s nice to see someone doing the same job but there was six of us in the bakery doing allsorts of cakes biscuits and other stuff but you are doing it all on your own Amazing skills thank you for sharing

There’s no way one person can sustain this forever, at least from what we see. Very impressive..makes me want to fly there immediately to help him out! Do you laminate some rich brioche dough for kouign amann? Your customers would freak out..they’re fantastic.. I love making croissants..I found a truly excellent recipe for them, a three day version at Weekend Bakers site.
