We have collected our bowls over many years mostly buying from sellers on ebay - we listen to the sound clips and if a bowl resonates with us then we may buy. It takes a bit of time but listening is important as it will develop your listening skills of what you like and what you think will fit with other instruments you have. We also find out the frequency of the bowls so that we don't duplicate what we have - if the frequency isn't listed then we use an app called Spectroid for Android to measure ourselves or to check the frequency.
