it probably would taste the same as the dehydrated version bc both are essentially just slowly evaporating the water in the juice. I think the freeze dried tasted different tho bc it sucks the moisture out instead of evaporating

Exactly, I feel like they burned it just to give it a bad texture on purpose. Burning a steak gives it a completely different texture than cooking it properly, as with any food/ liquid you burn.

As someone who heats stuff to separate I can agree. My mother taught me how to make ghee by heating the butter lightly to make the other stuff in butter to rise to the top and scoop it off. It's never boiled, lightly heating it will evaporate the moisture and water, which is what we did in chemistry lab too :)

The Simply Apple branded juice (the cloudy one) looks like what is called "Apple Cider" here in the NorthEast (PA up through New England). It's cloudy because it is non filtered. (The alcoholic cider is called "Hard Cider" in these parts...) Often the apple cider sold here has so much sediment in it that it settles out during storage so one has to shake it up quite vigorously to get all the yummy apple flavor. :-)

In Switzerland we boil apple or pear juice (I do pear) for hours in big copper cauldrons over fire, until it has reduced about 10 times. Then we let it sit overnight to cool, and then we pour the black liquid in bottles. It can be used for desserts as a coulis, or many other things. It has many names, of of them is "Raisinée" (french).

So, boiling juice story....When I was in college I took a Roman Life course, and as a project made some Roman food. The most iconic Roman food? Garum--fermented fish sauce. The traditional way to make this involves putting fish, salt, and herbs in jars in the Mediterranean sun for several months. The quick way to make it involves boiling down grape juice to 10% its original volume and adding anchovy paste "to taste". I did this twice--once for practice, and once for an actual grade. This had three results. First, I can no longer drink grape juice. MY throat literally starts closing, and I will vomit by the second sip. Second, I am no longer allowed to cook inside my parents' house. Third: When I presented this to the class my professor said "Anyone who would do this to their professor is either going to get an A or an F." Apparently he liked it; I got an A.

The untransparent apple juice you got, is something we call apple must in Norway, instead of pressed, its coarsly crushed, so it has a really thick consistence, and a lot of pulp, it is sweetened a little, but it tastes delicious
