I also made Dairy Free Nachos for dinner, and stewed some sad looking apples up for pies or something in the next couple of days! :D

Fabulous video. I particularly liked your summery of uses. I render lard when I purchase bulk pork, I ask for it and usually get more than I expect. I have not ground it up I usually just cube it, but perhaps next order I will try grinding it in my kitchen aid mincer. Thank you Nyssa.

I haven't really tested the theory of the difference in quantity between cutting and grinding it! But you are supposed to get more if you grind it, and grinding is easier than cutting it for me with the new mincer! :D

Nyssa, re the portable cool room. Jason from Sow the Land made one from a small enclosed trailer he bought. He insulated it, put in a portable air conditioner run by a cool bot. Worked marvellously when he butchered a steer. He had previously built a walk in cool room for Justin Rhodes (on KZbin)

The BBQ looks fine, it's used daily, it's tempered. It's also outside in the weather, the hail may have dented it a bit 😳. The fat looks great, love the price point. It is worth a day of work to produce so much lard, time wise it's real value for money. Congratulations on 6K subscribers, so glad others have found your channel 😀.

You're absolutely correct about the meat /fat needs to be semi frozen to run though the grinder, I am a retired Butcher and even our huge commercial grinder was set up in a huge walk in cooler and I like to froze to death every day grinding meat lol 😂 in the summertime it was a blessing but in the winter , it was a freezing cold .. that grinder you have is a good grinder/mincer.. when meat is too soft /warm the sineu tissue in meat gets tangled around the blade and clogs up the holes in the plate.. so you're doing the right thing to let the grinder cool off because it's hotter then h@ll there at the moment.. great video as always, love seeing your subscriber numbers going UP each day .

I definitely spend a lot of hours in the kitchen, but having my kitchen where it is etc I get a lot of opportunity to have a kid in there with me and help with schoolwork etc, its why I do all voiceovers, my cooking days are very interrupted! :D

Hi Nyssa So glad you showed the process of rendering the fat now I know exactly what you ment by it being clean. Looks like a lot of work but worth it in the end and you have eighteen jars of fat.Now I totally understand the difference between the the bacon fat and the purity of the fat you rendered.Great video !!!

Hehe, it gets so hot in there every time I use it, that nothing could survive, just layers of cooked on grease heh! I'd like to upgrade at some point so I can fit two of my large cookie sheets in at a time!

No game plan, I have a bit of an idea obviously of the kind of things I like to make with it, but no, no game plan lol, I have to figure it out as I go! Pros and cons to that :D. Because I go so intermittently, I can't guarantee I will get specific fruit and veg, so I don't like to plan on it, last year we got a lot of watermelons and the kids asked me to make watermelon cordial again this year and yet, no watermelons! So I just do what I can with what I get! :D

Hehe, yes, and I do say to people when they question the fact that we don't 'wash' our cast iron, unless it has had something acidic/saucy in it, we just scrape heat and season, how many of them have ever 'washed' their barbecues hehe.

This is first time I've seen fat rendered into lard. I love your channel I learned so much. I even shared it with my mom about your lifestyle and she said that's the lifestyle she wants to go back to. She grew up in the country in Mississippi.

It's time consuming and messy, but totally worth the effort hehe! My mother always says she can think of nothing worse than going back to my lifestyle, she relates it to how her mum (My grandmother) had to live with the 4 kids because she didn't have a choice lol.

Have you tried doing this with beef fat? We did it. It's a bit smelly, but it lasts well. Our grandparents were a lot smarter than most of this generation!

They are Soga, I really like them, I like that they have some nice big wide/flat ones rather than just the tall ones, The tall ones are hard for me because with the gas the bottom gets too hot trying to heat the rest of the pot! Woohoo! exciting :D

Super interesting watch Nyssa 😀 I haven't seen lard processing before. I also haven't cooked with lard before (except of course the fat off roast pork). Is it delish compared to other cooking oil or is the good price for a cooking oil the reason you do lard?

It ends up cheaper (more so if you are already processing a hog and you have the fat as well) than olive oil etc, I priced it out to about $6 per 1L jar. But it is also a wonderful alternative to butter for dairy free in a range of things (pie crust - I show an apple tart in one of the next videos with the pie crust) and it makes lovely 'authentic' tortillas, of course, it is super tasty for a range of things too! High in Vitamin D, low in saturated fat, super high smoke point etc :)

Your BBQ looks pretty clean to me!!! I’ve heard of some people using lard when soap making & hand creams etc. Have you ever tried it? I remember my grandma always had a cup of dripping in her kitchen, is that lard after it’s been used??

@@karenlauder9768 I’ve used tallow (beef fat) for soaps and stuff but not lard, but yes, people do! Drippings would just be a collection of used fats, yop, like bacon fat etc :)

I do my fat from the hogs we raise. It's good to see someone doing it realistically! I try and do the leaf lard separate and then use it for baking. But you're right, fried potatoes in savory lard is the best! I even label mine savory. So I know nor to grab that jar for cookies. Lol

We have pigs and one of the pigs is whole, so we intend to get a sow to put him over, we just haven't done it yet, its a big undertaking to make sure that we have separate enclosures etc and figuring it all out for the first time! For now, I"m super glad I can access it at the butcher! hehe, I put a number on the top, the first lot of whiter Lard has a 1, then the 2nd lot has a 2 and the 3rd a 3, just so I'm aware! :D

@@OurSmallFootprint that's a great way to number them! They really are fairly easy to keep. This will be my first year breeding them on my farm. My son has raised a few. The last 2 years we've just bought little babies and raised to butcher weight.

@@CrazyGrandmaWeaz I think we’d enjoy the raising of them as well! I am a bit concerned about the storing of the meat initially before I get it minced and canned etc, because to get a mobile butcher out we’d probably want to get a couple processed at a time. But it’s definitely on the cards!

I think when you hear the corn chips it brings out the oil which may be why they don’t get soggy from the additional stuff. I have no idea if that’s true but it is my theory haha Your BBQ doesn’t look bad at all!

That makes sense! I dunno, I just know it works lol. Maybe its like par baking a pie crust, it just creates a layer that's hot that doesn't suck in the juices from teh filling!

5 of the 6 kids have issues with Dairy, they have done since birth, we've worked through a lot of them, and under allergist advice way back when we introduced milk kefir and yoghurt (fermented dairy) which they all tolerate so long as they don't go overboard, so we have that now. Theoretically, some of them could have outgrown their issues, but the resulting symptoms of trying really really turns me off lol, so they can test their boundaries when they're older and can clean up after themselves lol! Darryl is lactose intolerant, he suffers from severe reflux and stomach issues when he consumes dairy as well, so its just easier to keep everyone on the same things basically. :)

That is dependant on your health, the way you consume it and quantities :) It is high in Vitamin D (Second highest to Cod Liver Oil, dietary wise), It has healthy cholesterol, It is heat stable and therefore doesn't break down when used for cooking, lower in saturated fat than butter, but also, economical and tasty :)

Yep, and these “experts” who tell us what to eat seem to be constantly changing their tune so I wouldn’t worry about any of that (eggs are full of cholesterol so don’t eat them, now it’s eat them every day - butter is pure fat, it’ll give you a heart attack, now it’s far better for you than vegetable oil, etc. etc…) I found this one fascinating, especially the way you plan on getting every scrap of goodness out of those cracklings - it’s the sort of thing my mum would have done back in the day. I recall as a child many a happy snack of dripping on toast sprinkled with salt (stick THAT in your pipe, experts!) You are also fortunate to have access to actual butchers where you can obtain the fat, since so many in the UK these days just seem to buy in pre-packed meat from wherever and you never see things like fat available anymore - unless it’s already jarred up so they can charge a premium for it. I’ve paid for it myself in the past (delicious roast potatoes resulted!) but having seen how easy you make this look I’m on the hunt for some to process myself now, and since it’s shelf-stable it could be my first foray into canning!!!

@@frugalitystartsathome4889 Standards change constantly, but also every body is different, you have to think of heatlhy eating as a holistic approach per person, its not a one size fits all! None of us have diabetes issues, none of us have cholesterol issues, and we try to consume everything in moderation and well balanced, the right foods with complimentary foods so you get the goodness out of them etc but still enjoy what we eat :D It's a super simple process! messy and time consuming, but totally worthwhile, (Spoiler! but I used some of the well cooked cracklings ground up with seasoned flour to crumb chicken tonight and cooked it in a little of the rendered lard... woohoo, KFC style tenders without the transfats! :D hehe.)

Did you know that margarine was invented to clean cows udders, not for human consumption! Most of the so called healthy oils are best suited to cars, not humans!

We haven't tried to be honest, it wasn't easily accessible when they were babies, we did consider getting goats, and that way we could have our own milk supply, but they require a lot of sturdy fencing in my experience (We had some pet goats previously) and we just don't have the resources to fence adequately atm, we also have a lot of night predators, so they would need to have a secure night pen too etc, it might be something we do eventually!

@@OurSmallFootprint I understand. I lived in a small town when my kiddo was little. No goat milk to be found. I used to have to drive 3 hours to a big city and buy cans of powdered goat milk. I wish I would have known about the cashew cheese back then. You do an excellent job of finding substitution for milk and cheese. Please don't think I was judging in any way. I was just curious about the extent of the milk allergies. Brings back memories for me. That kid of mine is 35 now.

@@theworldasweliveit.7189 Not at all, they have had varying degrees of issues, Surreal ended up on an elemental formula, first baby, no idea what was going on and why she was so sick, threatened with hospital stays if I didn't put her on bottles etc etc! Apollo reacted extremely poorly too, but I persevered with changing my diet completely and keeping him breastfed, it turns out he has OI (Brittle Bone Disease) as well so that could have been partly why he was so miserable as a baby! Sonnet didn't react as violently, she gained weight well etc, but I still just removed it from my diet to make life easier though she still seemed to have some issues and the doctors decided she had primary lactose intolerance which is very rare, but she still gained weight etc so we charged along until she weaned, she gets pretty severe eczema though from dairy and latex based fruits etc. The twins were horrid, at one point we had them on a diet of purely breastmilk, lamb, sweet potato and pear to try and eliminate anything that caused them isseus lol, they were born at 33 weeks though, so that could have been a large part of it. Kavik was good though, he didn't really have any issues with me eating dairy while being breastfed, but it has just been easier to keep everyone on the same diet!

@@OurSmallFootprint you are an amazing Mom. My daughter had horrible eczema and the worst diaper rash. I was accused of neglect before we figured out what was going on. My other daughter had seizures from certain food dyes. But they grew up to be healthy adults thank goodness. 🙂

I think they need updating, someone else mentioned that too... urgh! I will put it on the list and try and get it done for tomorrows video, try and add some new ones I've been meaning too etc as well!
