I loved what you said about “even though it was cheaper, you consider the time, energy and mental energy…” Made me think of our renovation process and how slow it’s taking but it was to save money, but then not having a kitchen has been stressful and so I wonder is it worth it? Absolutely. No regrets now. We’ve been able to be more deliberate in our projects and take time to do other projects…

I've watched a few of your YT videos during the last days and right now for lunch i tried to recreate one of your recipes as i had an eggplant in my fruit basket and a can of tomatoes in the cupboard 😉 - lots of herbs and olive oil, and it came out really well.
