I mean, height (scale), for example, can I categorize people as tall (1), medium height (2), short (3)?? Thank you!!!

Sir, In my survey data - Gender , all respondents are male, i have added gender values as1= Male, 2= Female. for fetching the value in frequency table. but when doing frequency testing result is not displaying female and just showing male =100%. can you hlep me with this Thank you

Yes, SPSS will only show a category in a frequency table if there is at least one data point in that category. If there are no females, the category will not even show up. Add a new case coded 2 for female and you will see it appear in your frequency table. Good luck
