In the games they've been trying to blend out the less realistic or campy aspects in favor of more gritty realism ever since 7. Chris is mine famous among the protagonists (alongside Leon and his hair) for being suddenly Very muscle bound almost out of nowhere when he reappeared in 5. In 7 he was made to look more like he would've back in re1 remake, but the change was too glaringly noticeable. So they went back to the 5/6 version and just toned down a bit of that beefiness while making him look naturally older. And it worked
