🌿Ingredients:
•1 red pepper, cut into small pieces
•1 green pepper, cut into small pieces
•300 grams paneer cut into big cubes
•1 large onion cut into cubes/petals
•butter, as required for brushing the tikka
•fresh coriander leaves, finely chopped (for garnish)
🌿For the onion & cabbage salad
•1 large onion, cut into thin rounds
•1 cup cabbage, finely sliced
• handful of dried mint leaves, crushed
• Zest of one lemon
• juice of half a lemon
•1/2 tsp chat masala
👉Method:
Combine all of the above ingredients in a bowl and then using your fingers toss well to combine.
🌿For the marinade -
•2 tbsp roasted besan (gram flour)
•1 cup hung yogurt (or Greek yogurt)
•1 tsp red chillie powder (adjust per your spice preference)
•1 tsp turmeric powder
•1 tsp coriander powder
•11/2 tsp chat masala
• salt to taste
•1 tsp dry mango powder (amchoor)
•1 tsp garam masala
•1/2 tsp crushed black pepper powder
•1 tsp kasoori methi
•1 1/2 tbsp mustard oil (smoked)
•11/2 tsp ginger garlic paste
👉Method: combine all the above ingredients in a mixing bowl and set it aside.
Then toss in the red peppers, green peppers, onion petals and paneer cubes in the marinade and slowly and gently mix them until each piece is coated well in the marinade. Cover the bowl An allow this to sit for at least one hour for all the flavours to marinate in the paneer and the veggies or perhaps even overnight if time permits.
👉To assemble:
Thread these pillowy soft cubes of paneer and veggies onto skewers just as shown in the video alternating the paneer , peppers and onions. Just make sure that you soak the wooden skewers in water two hours before so they don’t burn while grilling.
Repeat the same process with the remaining paneer and veggies until done. Then place the skewers on a grill and cook for 10-12 minutes, turning halfway through.
Once the paneer tikka is done remove from the grill and transfer it to your serving plate, Brush the tikka with some melted butter for that extra juicy and moist texture, garnish with some fresh coriander leaves and a slice or two of lemon wedges and serve immediately.
I like to serve my paneer tikka with a spicy yogurt and mint chutney, alongside my tangy crunchy onion and cabbage salad.
