Undertale isn't really difficult anyways. It throws " IMPOSSIBLE " difficulty randomly when it's convenient for the story, and because you didn't get much training on the merciful goat and the repetitive fish before you get oof'd in the climax of your story

I think the only run that has “Impossible” difficulty is Genocide, and it’s definitely by design rather than random. Genocide is clearly designed to be a miserable experience. The grating BGM outside of the two real fights, repetitive grinding, and boss fights that are both emotionally painful and either way to easy or way too difficult. It’s meant to wear you down and give you no reason to continue beyond “Seeing what will happen”, then specifically points put this motivation and how it warps your perspective.

The fandom invented a story where being souless made all emotions disappear in Asriel, but it only prevented him from feeling love.

tbf avoiding damage from sans is far easier than avoiding damage from omega flowey after a couple attempts. flowey is only seen as easier because the amount of mistakes you can make is far higher. But it does give a first impression of being much harder.

If you are fool enough to get attached to the characters this game does terrible things to your emotions. As your health gets low you start taking less damage, so you can take alot more hits than it appears, and I believe that during some segments its impossible to die.
