When you oil the grill, I always used an onion. One half I would "clean" the grill and the other half was for oiling. Keeps unwanted lint and loose wires from getting on the food. Great video!!

Adam & Abby I am proud to see Adam cleaning the grate of the grill before applying the grape seed oil. I had a friend and family member who never cleaned their grille. I don't eat at either household anymore. They claim the food stuff gets burned off the next time you grille. Please - since you all are professional grill 'ers, post a grill cleaning and maintenance 101 and why it's important to do this.

You're nuts. Scrape off the chunky stuff, but clean to bare metal? WASTE of time, and flavor. the fire DOES burn everything off. Are you one of those folks who scrubs your cast iron pans clean too?

I love watching the Hasty Bake videos. I purchased a roughneck on black Friday last year. I also purchased a charcoal basket for a Hasty Bake ranger. It fits under one of the cooking grates of the roughneck. I had to modify it (needed to be a few inches longer) this allows me to do quick cooks like kettle grill as well as doing reverse searing. I am looking forward to more Hasty Bake videos.

Looks awesome! One thing I like to do is keep the thermometer in so I can manage the rest. Once the temp plateaus and starts to come down is the perfect time for the sear.

Nothing beats a great steak! I'm trying to "reconstruct" Pop's Worcestershire steak sauce. He never wrote it down, and I don't know where he got it or if he made it up on his own. He started with a half bottle or so of Worcestershire sauce, then added olive oil, salt, garlic powder, Accent (MSG), and a Bay leaf. (I'd skip the MSG). All mixed in the Worcestershire sauce bottle. Best if it "mellows" for a few days in the fridge before use. We usually did T-bones or bacon wrapped Filets. Inch thick or so ... I'm not really sure of the proportions, but the ones I've tried turned out pretty good! Good to marinade the steaks with overnight before grilling, with a little ground pepper applied just before grilling them. Funny thing. Pop liked his steaks Medium Rare, Mom considered them RAW if they weren't cooked "Extremely Well" as in dry and almost carbonized! We always took Pop's off the grill first, then mine (I like them Medium) and finally leaving Mom's on MUCH longer! Always turning them over every five minutes or so... Mom never really liked grilled steaks, always preferring to "Pan fry" them in a cast iron skillet (again cooked to death)...

It’s widely believed that a steak cooked to “well done” losses its best flavor and texture but seem people like what they like. We’ve all eaten done steaks because sometimes you just don’t get it right. I’ve overshot mine countless times and why I love using my meat thermometer instead of guesswork. Your marinade sounds good! Hope you get it figured out.

I am 100% with you on the reverse sear. It just works. I don't have the setups you have (I just have a Propane Weber (their really big boy, and it is AMAZING), and I have a Weber Kettle (that is giving me fits). I LOVE reverse searing my steaks, but wow, it is useless if you don't have a 1" thick steak at least. I've tried 3/4" steaks, cooking them at 200F until 115F, and it's 20 seconds on a side on the sear and...140F finish. :( One thing our butcher is doing more of...the old school cuts. Round Bone, English Cut, Rump, Family Steak (Sirloins, but multiple muscle groups) and tri-tips. They can't sell Filet any more, it doesn't sell. Not at $40/Lb!

The roughneck is designed to smoke or grill, but to get the really high heat you want for a sear the charcoal needs to be much closer. I would need to raise the fire basket higher, maybe set it on the second cook level. It’s a mod I have thought about trying at some point. Also, I like snuffing out that large load or charcoal for the next cook. So for me it’s easier and simpler to get the little hasty blazing hot and do the final sear there. Any number of ways to pull this off, it’s mostly the cooks preference.

There are so many folks out there who cook for their eyes vs. taste. Especially those who take an expensive cut of beef and cook it past medium to hide the red juices. The best flavors of beef come from a hot bed of coals and cooked to medium-rare or even a little less but for sure its got to be "charred" to your desired temperature. Meaning, its got to have the exterior just begining to burn while the inside is maintained at a lower temp. Even if you have a gas/propane grill, get it hot or if in the oven or on cast iron, get it hot.

Some people’s body’s don’t react well to heavy meat proteins. Abby is one of those people. Eating steak usually makes her sick. It’s like she can’t digest it well.
