Looks good, Matthew. I bought me a 24 oz. ribeye to grill tonight. When I got home, I discovered I had used my last bit of charcoal and had forgotten about it. So, I did a reverse sear on my Blackstone. I pretty much did like you, started around 350, but directly on the griddle, not a rack. When it was time, I boosted temps to 450 to sear. Good eatin', my friend.

With the bar accessorie can you still run the (original) bottom shelves? Also are the wind guards needed? (Assuming they fit with the bar set up) And what hard cover lids fit with the bar set up?
@thehungryhussey4 жыл бұрын
Yes, they’re still usable some. Wind guards may still be needed depending on your location. The regular hard cover will work it just cannot hang off the back like without the surround. You’d just remove it and place it somewhere while cooking.

interesting that you use a cafeteria tray. I use them too. I'm not certain if they're intended for meats to be all over them, but the raised edges are really useful. Then after a couple years or so they get all scratched up and are hard to clean. I should buy more at a time...
@thehungryhussey5 жыл бұрын
Sure they're okay for meat. Don't see why not? They're NSF (bought them from foodservice). I bought about 8 at one time.
@monkeyb18205 жыл бұрын
They get scratched up easily, and they're particularly gross when bits of raw chicken catch on the scratched areas so I wasn't sure if this usage meets restaurant type rules--but I also think it's a-ok for home usage. The problem with the official red/yellow/green plastic cutting boards is they don't have the useful raised edges. I'm off to go buy some more cafeteria trays...

Hey Hussey! Love what you did with the strips. How do you clean your wood cutting boards? Also what do you oil them with. Big D.
@thehungryhussey5 жыл бұрын
I clean my wood boards with soap and water and then here and there I'll take a half a lemon and salt with cocnut oil and really scrub them well. Then re-oil with mineral oil.
@michaelsalmon64365 жыл бұрын
@@thehungryhussey Soap? You use soap on your cutting board? C'mon man! You are doing the right thing by using the lemon juice and salt, but not table salt, I hope! You should recommend that your many patrons use coarse Kosher salt for this task. It is the "coarseness" that will scrub away any pesky critters that remain hidden in those cracks of your wood board. By the way, those cracks are the same cracks that allow tiny soap molecules to hide. Just one more thing to ruin the taste of your steak. Better to wash away the surface of your board with tap water before and then after your treatment with the lemon and the salt. And one last suggestion, allow your board to air dry thoroughly. Your board will reward you with dependable service over your life on earth. You are pre-treating your board before you use it, aren't you? I like to season my board with a rub of olive oil, coarse Kosher salt and fresh ground black peppercorns, before I place my grilled meat upon it to rest and then be appropriately sliced. Mineral oil? I detest the aftertaste of mineral oil. Me thinks that the only possible need to apply mineral oil to a wood cutting board might be if you are planning to store it away and never, ever use it again.

I forgot to mention how damn good that meal looked. Since I don't like rare meats they were done just right for me! I also buy and make yellow and zucchini squash.....it's one of my favorites, but I cut in chunks or just medallions , fry, and then I add butter and cornmeal....mmmmm....lol. I use lots of pepper and a little salt, and I make fried green tomatoes the same way....sooooooo good. I'm sure you all enjoyed that, it looked delicious!

No reason to apologize. I have a few SV videos. What I have found is the watches aren't real good, so I thought folks weren't really interested in SV.

Great video. Good looking meal. . Did you make your counter out of pavers? They can take the heat?

Thanks John! Counter? Around the Blackstone? That's a metal surround that Blackstone sells. There's some hot spots one has to watch out for.
