You are not a chef but let me tell you something your review was much better,informative detailed than many experienced chef I’ve seen here on KZbin in search of info about this knife thanks.

My pleasure. I certainly am not a chef but I do know a bit about knives, whch a lot of chef's don't really know. they mostly know what the chef that trained then taught, which might not have been much at all. Mind you, I respect chef's, but only a tiny minority of them are "knife guys"

I recently purchased the newer AUS-10 version of the Dalstrong 10.5" Shogun series, and so far, I have been very disappointed in the edge retention of this knife, especially considering it's marketed as being rated @62 HRC. I cannot in good conscience recommend these knives to anyone, after my experience. After an initial touch-up of the blade, it was quite sharp, however, I had to strop it every few days just to keep a usable edge on it. I've only been using it at home, and have been very delicate with how I use the knife.

Is it Real Damascus ?

Yes and No. Real Damascus hasn't been made for many many 100's of years. This knife has pattern welded steel which many people call Damascus. It is made of 67 layers of alternating steel sandwiched together with a thicker layer of AUS 10 in the middle - the part the cutting edge is made of. So it is what people like to refer to as real Damacus (just like I say in the video) but it is only real MODERN damascus.
