This time taking a closer look and seeing if there is a way to remove the shards of piston without having to dismantle everything but looks like there are no shortcuts with this one - engine removed and starter motor repaired.

I'm probably just an idiot but I've removed all the bolts to remove flywheel cover to get to my coils, but I can't manage to get it off, would I just need to bash it of with mallet or am I missing something I need to do

If you've definitely got all the bolts off, the gasket is probably acting as an adhesive. You'll also be fighting the magnetic force of the flywheel - I would probably take a very thin screwdriver and work your way around the gasket to see if you can get any purchase between the cover and engine casing. Although you don't want to be too rough with as it's only Aluminium and will damage easily - hope that helps!
