YOu don't want the switches, i want to use it for Domoticz and just from smartphone, what kind of strip is compatible with the controller WS2812,SK6812 howe about the light quality, strips of 5 meter need to be powered at both ends because of the power drop , light will not be the color as expected if you go beyond 5 meters?

Can you not set the RGBW2 controller colour via the app and then just turn it on/off with a physical switch? And if yes, how? what are the settings?

Those are lever wire connectors. In the UK you can get them from places like Screwfix.

Just don't connect the switches. Easy.

This grey part used in the video is simply wire connector (designed for split electric circuit) available in most electric shops.
