Honestly with the Lobster thing, I think Links theory about it being freshly cooked played a big part. Alongside that it probably would have been flash frozen soon after they slaughtered the lobster which basically keeps it as fresh as when it was slaughtered.

yeah, that's why if you live near the centre of NA you should really be buying frozen seafood, unless it's shipped alive, like mussels, lobsters etc.

Exactly. Seafood does not reheat well. The fresher the better. The frozen one being made in-house (in-studio?) had a big effect on the final quality. The only thing they tried that reheats well was the chowder, and surprise.... it was a clear win for the fancy option

It was also probably cooked by Josh who might very well be a better chef than the chefs that prepared the rest of the dishes.

The "she" in that tongue twister is actually Mary Anning. A real life shell seller who also collected fossils and made a good contribution to paleontology in the 1800s. She discovered the first full Ichthyosaurus skeleton.

it also helps that it was most likely cooked and served within a couple minutes compared to probably closer to an hour for the others, but I still can't get over a lobster tail being $80 USD, that's actually criminal if it's just for the lobster and a side and not a surf'n'turf thing

Some of that seafood just isn’t the same when reheated. The salmon and lobster from the fine dining places ended up being over cooked. I bet at the restaurant it’s amazing

Especially regarding Lobster and Calamari. Neither of these reheat well at all. It gives a distinct advantage to the frozen foods that would have only been heated once before serving.

@@annahogle5397 Ramsey also doesn't have a restaurant farther than 50 km from a coast of any sort, frozen seafood is often far better than "fresh" if you're far from the ocean, that's one thing that bugs me often with how he thinks about stuff, especially for small restaurants, he's got a lot of privilege for the kind of stuff he has access to, though I think it's a lot of just doing a 'bit' for his shows.
