Honestly with the Lobster thing, I think Links theory about it being freshly cooked played a big part. Alongside that it probably would have been flash frozen soon after they slaughtered the lobster which basically keeps it as fresh as when it was slaughtered.

yeah, that's why if you live near the centre of NA you should really be buying frozen seafood, unless it's shipped alive, like mussels, lobsters etc.

Exactly. Seafood does not reheat well. The fresher the better. The frozen one being made in-house (in-studio?) had a big effect on the final quality. The only thing they tried that reheats well was the chowder, and surprise.... it was a clear win for the fancy option

@@annahogle5397 Ramsey also doesn't have a restaurant farther than 50 km from a coast of any sort, frozen seafood is often far better than "fresh" if you're far from the ocean, that's one thing that bugs me often with how he thinks about stuff, especially for small restaurants, he's got a lot of privilege for the kind of stuff he has access to, though I think it's a lot of just doing a 'bit' for his shows.

Considering how much Americans love things like wings and ribs I'm gonna have to disagree with you. Seafood is just a special case cause it has so much more potential to evoke disgust.
