The submissions are stockpiled as they come in, and are tagged with their relevant key words. Then for each episode, a crew member will pull up a submission that relates to the content that day. Agreed! I've been fortunate to have been able to try ramen in a lot of cities across the US and Canada, and the best ones have always been in tiny shops where a bowl costs you like 10 bucks and the lineup to get in can take up to an hour.
