I’m with link, some taco places in the US use thicker tortillas and do NOT need to use 2 tortillas. In Mexico most taqueros use a softer thin tortilla so the double tortilla is not overwhelming.

As a Mexican, I'll never eat "fancy" Mexican food. Plus, many dishes in the US are Americanized and are more Tex-Mex than Mexican. Also when you go down to Mexico, resorts will serve you the Americanized versions as well. You have to have the real food served outside the resorts. 😂

I have tried a lot of restaurant Mexican food. It's always bad. Even a decent fancy taco isn't half as good as a tortilla with a scoop of suadero inside. Making tacos fancy downgrades them.

That corn fungus is called "huitlacoche" and it's delicious mixed with Oaxaca cheese and some salsa verde on top. *Chef's kiss And we Mexicans love our carne asada con papas. It's common to have them on the side as well as rice and beans.
