Very nice stitch. I tend to work tightly so this could be a challenge. If I chose a stretchier yarn, do you suppose that might make a difference?

yes that and a loom with a smaller head on top so its easier to take over.

If I use an odd peg loom, can I do a flat panel without the border from the video just with the rhombus stitch?

it will curl a bit but yes you can
