The leaves contain oxalic acid. Which is also contained in the stems but in a much smaller concentration. It is also in things like spinach, chard, parsley, some nuts, Black tea and coffee. And some other things. But all of them contain much less than rhubarb leaves

My cousin got stomach cramps and vomiting after eating her way around her friends garden and it was only when asked wait what did you eat and she listed off rubarb leaves and her gardening friends was like ohhhh noooo! 😂 (she’s fine now and passed on some toxic leaf knowledge to me)

For those with kidney disease/kidney stones, oxalic acid and oxalate are something to avoid because they can lead to kidney stones.

@@kellyriddell5014it has its own unique tartness with a bit of sweet hint. I think I remember as a kid I used to dip it into some white sugar and munch on it as a snack…almost like a sour candy…but nothing beats some rhubarb and apple or rhubarb and cherry pie…it balances out the sweetness so nicely and is very soft when baked.

Love that I'm seeing rhubarb around more often! We had a bunch of plants growing up, and every summer my grandma would make dozens of jars of rhubarb jam. What she couldn't fit into jam got turned into pie or upside down cake. It's such a lovely plant!

Yum! When I was a kid we’d pick it and wash it under the garden faucet, then eat it raw dipping it in a cup of sugar. Mum would stew it and serve it with custard. Good memories.

I've never tried it dipped in sugar! We liked to dip the very end in some salt and take a big bite. Mmmm! Sour and fresh and delicious! I'm going to have to try it in sugar!

I too used to wash the picked rhubarb under the gardenfaucet & dip it in sugar as a kid. It was one of my favorite summertreat as a kid. My mom also stewed rhubarbs but let it cool off & get almost to a creamy consistent & we used to eat it with milk instead of custard.

When I transplanted some rhubarb from my grandmother’s garden, she taught me not to pick it at all for the first year so it would establish itself. I’ve had rhubarb in that spot for about 10 years now. 💜

I was SHOCKED at the cost of rhubarb in the grocery store because growing up in Alaska, we had a plant and it just…maintained itself, and we had lots of rhubarb each summer 😂

Rhubarb has the same residence as the immortal weeds i have in my backyard. I used to shovel that plant to kill it but it never worked, it grew back next spring. But then i discovered it was edible plant😅😂

My dad loved it and had it growing as long as I could remember. I love it with just eating the stalk with salt. Sliced with salt, lemon, vinegar, oil is good also... love it many ways

I eat rhubarb, poached in ginger and sugar, with my oats porridge. I also cut it into chunks and place on a baking tin sprinkled with sugar and green cardamom. I then pour a freshly made cake batter over it and bake.😊

OMG it's so good to see folks in the US embracing Rhubarb. It's kind of an old-fashioned thing here in the UK but people of my age (late 50's) grew up on Rhubarb Crumble after our Sunday dinner! Hope to see you growing gooseberries too!

I grew up with rhubarb but we never had the custard. We just boiled it and added sugar or made a cobbler from it. My dad knew about it. It's been a thing in the states for forever

One of my favorite memories of my grandpa was helping him in his garden. He used to treat me with a stalk of rhubarb when I did. I still remember that tart flavor! He passed when I was six, but my many beautiful memories are still with me! Thanks for the info; I need to plant some of this in my garden this year!

My grandmother grew up in the Depression, and her father would plant rhubard in the place the old outhouse used to be whenever they had to move it around. She said it always grew up healthy!

My mom used to make rhababer streuselkuchen, which is basically a normal plain cake with rhubarb pieces sprinkled into it, topped with streusel, which is basically cookie dough crumble. It brings out the actual flavor of the rhubarb without overwriting it with strawberries or other flavors😊

My mom also has made something similar very simple and brings out the taste of the rhubarb like you say. It’s called rhubarb marshmallow cake. Basically just a base layer of your rhubarb mixture and then your marshmallow mixture on top…bake and it’s this super light and fluffy cake that you can’t stop eating.

I still have vivid memories of my mom sending me and my siblings out to the garden to fetch rhubarb or chives or some other herb. Our favorite was when she had us pick the rhubar because that meant she was making rhubarb cobbler, or some other delicious dessert.

@@garyhyndman1105 OMG yes! My grandma used to blanch the stalks fresh from grandpa's allotment; she made jam / crumbles with most of it but I always managed to secure a stalk for myself dipped in light brown sugar and a little condensed milk. Happy days!

I remember losing one of my front teeth when i was like 12. I was sliding my teeth across the rhubarb to get the juices without the stringyness. I loved eating it right out of the garden.

Pro suggests: If you get a flower stalk, cut it ASAP...BUT! that's a sign the crown needs to be divided next year! So leave a marker on the plants that flowered so you can dig them up and divide before next spring.

My rhubarb plants are at least 50 years old. My parents got them from my great grandparents' farm back in 1972. Rhubarb Upside Down is my favorite and a must have every summer!!!

I love my rhubarb! So easy to maintain and yum! I make pies, cake, crumble, compote that can be used as a condiment for chicken or as a dessert with a crumble and whipped cream or I cold pickle (can’t find a better translation, but it’s in sugar and vanilla) them and use them as a side for light meats. They can also make a lovely syrup for drinks or like lemonade (but with rhubarb). Jam is also good, but I don’t make that. Also a mix of rhubarb and strawberries is perfect!

I got you. Mix: ⅓ sugar ¼ tsp salt ¼ cornstarch 1 tsp vanilla 1 lb strawberry (cut in 4 pieces) 3½ cups of rhybarb (cut in ¼ inch) Full a 9 inch pie dough pan with the mix (fresh or frozen) Top it with 1 tsp butter (cut into tiny pieces) Pie dough top Egg wash Bake for 425 for 20 mins Cover the edges of the aluminum foil (make it look like a donut tent) 375 for 40 mins ***I would make the aluminum donut before baking so you can pop it on top when reducing the heat. (Recipe is from a cafe I worked in Texas)

Just chop them up and add them to a saucepan with a big squeeze of lemon juice and sugar to taste, and cook them for about 10 minutes or until they’ve turned to stringy goo and dissolved. Serve it with custard, ice cream, sago, or anything else that takes your fancy. Easy as! I’ve also heard of people eating it raw, dipping the end in sugar, but I think you’d have to like very sour things for that!

Rhubarb jam: Wash and wipe dry the stems. Weigh them. Chop up into 1 cm slices (quarter inch). Now mix equal weight of rhubarb and sugar in a GOOD steel pot (aluminum is forbidden! due to the oxalic acid, it reacts with aluminum) Let it heat up slowly on low heat. I mean slowly! Boil at low temp for hours on end when you're at home (just leave the lid on and turn it off if you need to go). You want it barely bubbling. The goal is to achieve a deep red color, and a smooth texture where the chopped slices of stalk have fallen apart into mush. Put a spoonful of jam on a plate and let cool in order to test the jam for doneness, texture and taste. It will thicken up upon cooling. No need for any additives - when done, put in jars freshly clean, dry and hot from the dishwasher (must be hot so the glass doesn't shatter). Add in a small amount of jam and roll the jar so jam covers the glass. Then fill after that. Allow to cool a bit at room temp, without lid. Sprinkle a layer of white sugar on top of jam surface and then put the clean lid on. Store cool. Warning: A common mistake is to boil quickly and at higher, bubbling temp. The only thing this will give you is a bright red, rough texture jam which will have a great tendency to form sugar crystals. If that's your preference, well... 😂 Edit: Don't harvest too late. It makes bad jam. Also, please include both fat and slender stalks, also stalks that vary in color. The variation makes better jam. Also, although you pull the stalks up while harvesting, my mom always chopped a lot of the white stuff off. She said it gave bitter flavor to the jam (if mermory serves me). I hope you try it. Jam stores well over a year and we use it in many baked goods (not incorporated in the dough, more like a layer in between layers of dough). Great on waffles. Try a slice of bread, buttered, a slice of cored apple and rhubarb jam in the cored apple's hole. Children's classic ❤

Ready to cook crust or your homemade. 4 cups chopped rhubarb 4 eggs beat 1 cup sugar, 1 tablespoon flour whip into eggs. Put the rhubarb in pie crust . Bake 1 hr. At 350. Check if done with knife. Add time as needed.

My grandma taught me to make tart rhubarb pie with a homemade crust when I was 14 and I have been making them a couple times a year ever since. It's my husband and my dad's favorite dessert so I love that I can bless them with something that isn't readily available

Living in Northern Europe (Denmark), growing up we had wild rhubarb growing at the end of our yard and the beginning of the wild forest that bordered our yard. It was a favourite light snack to go down and pick wild berries and rhubarb, bring them up to the house and have rhubarb, wild berries, sweet breadcrumbs (basically bread crumbs and sugar), and yogurt dressing With a glass of lemonade and you basically have the first 20 years of my life

Rhubarb is especially delicious in a strawberry rhubarb pie. I make it every time it's in season and the kids can't get enough of it

The only place I’ve ever seen rhubarb was in my family’s ‘Victory Garden’ as a child. We ate it raw or dipped in sugar and our Mom (RIP) used to make the best rhubarb and strawberry pie - absolutely delicious!!! Sincere thanks for reminding me of the very rare good parts of my childhood.

I do and always have loved rhubarb. I remember growing up in rural north central Indiana and that was our treat. A rhubarb stalk and a couple teaspoons of sugar to dip it in. ❤❤❤

I pulled a tonne of Rhubarb last week. Now the stragglers I left are doing awesome. Rhubarb is crazy easy to grow! I was thinking about cutting and transplanting some, but just doing a half harvest seemed to work.

Old disabled house bound dusty rusty rockhound here: Mmm! one of my favorites! Cobblers, Pies, with strawberries and without! I also used to make strawberries Rhubarb syrup for pancakes and waffles! Yum!

We used to have two giant rubharb plants in the garden, and they were so hardy, nobody ever paid much attention to them at all and every year we harvested stalks from them. It was great, Nana always made rubharb and apple crumble.
