Have red and green rhubarb in my garden. In season I use it regularly to make baked fruit combinations. Apple/ plums/ pears whatever is left over and looks slightly over ripe cut up fruit with rhubarb add some chopped glacé ginger and apple juice unsweetened. Bake half hour or so in the oven turning every so often. Turn the oven off and let it cool in there- you get a syrupy mix that is great at brekky or with Greek yoghurt and mixed seeds. Equivalent to using up your end of week veggies in soup or vegetable gratin. Love rhubarb and will try this recipe.

Btw, I just rewatched a video to check and they did a rhubarb and ginger jam just using lemon for the pectin. The channel is called Handed Down Kitchen and it was a 1930’s recipe. It’s a lovely channel. She called the sugar “preserving sugar” and at first I thought that had added pectin, but then she explained that it’s jam sugar that has added pectin and this was 100% sugar. Now that I’m thinking about it I think I’ve seen an explanation before and it’s something to do with the crystal size.

I've heard from many people that using honey for jams or canning in general is a waste because heating up the honey that much gets rid of all the good stuff in it and that's why most people use sugar. Is this untrue ? Or do you like the taste with honey and use it for the taste exclusively ?
