This one is special! We emptied the freezer (literally) & loaded the Lone Star Grillz offset smoker w/ Ribs, brisket, & pulled pork & spent all day hanging out & Smoking meat...and it was epic (really!)

OMG - the editing on this video - who did it, some pro from the future! Some movie production company, some college graphics brain??? Totally awesome, my mind was like WHATTTTT right from the beginning! What a great cast of players in this video! Brian is taller and handsomer in person lol!! I was legit worried, man. It took forever to get that stuff out of the fridge and the night before I had made some steaks that were in that batch and they were legit terrible. Turns out cryovac is pretty good as it's craft. haha

Nice fun video Justin! Good to see you back. My last couple of briskets I've used some non-traditional seasonings. McCormick's Chicago Steak seasoning and I did a Wagyu brisket last week and I used Kinder's The Steak Blend. Both came out very flavorful and the temps have been conducive to good smoke flavor so win win.

I knew that this video was posted several days ago, but here, it's Mega-Graduation season, and my cameras have been on non-stop duty all week. With much more to come, I decided to take a well needed break from all of the attending, recording and editing JUST so that I could make me a mega large Milo/Huckleberry Mocha and actually WATCH this video. So glad I did, too! That's some epic you tube mega star power and mighty fine eats all wrapped up into 25 minutes. Back for a 2nd view as soon as I edit down a bit of today's doin's. Phew... 5 Stars! (Where'd those stars go, You Tube?).

As someone who uses lots of defrosted meat product, it is always a good idea, after defrosted, to spritz it with vinegar and let sit for about 5 minutes. Then rinse and dry it. Helps get rid of that minor funky smell that defrosted meat can develop. ...But I do that for fresh meat also, you don't know who was handling the product before being packaged.

Hey Justin! So I also have an LSG, and I've always been nervous to use it with rain. Not sure why, but is there anything you do differently with rain? No issues with rusting or anything like that since it's hot enough to just evap it away? Thanks! Great video!

Not really. I just plan on using a little more wood and keeping an eye on things a little closer.

Who was that TALL "Young Man" that made a quick cameo? WOW Great video. I even learned about freezing meat. I always tried to made sure they weren't jammed in together.

What your opinion on upright smoker vs pellet smoker/grill ?

Pellet grill for people who don't have time or inclination to babysit. Offset for people who want the authentic bbq experience...or who don't want to fiddle with fixing stuff (all pellet grill require maintenance at some point.)

That’s funny, I (from Atlanta) used to live in London and did a bit of mudlarking. You would have to be very dedicated to make a vacation of it, but it is a lot of fun…and for sure you will find pipes, they are everywhere! London has plenty of other things so go no matter what. DM me if you want specifics.

That was a cool video. Good food prepared, and shared, with good people. There is another alternative for freezing meat that works almost as well as a vacuum sealer, and likely with less fuss and expense - a meat wrapper/heat sealer. Just do three or four layers tightly around the meat; without the foam backer. I also have a request for one of your "five questions" for Greg when you get together again ... "Did you ever try those flies that Handcannon sent you?" Take care, Justin, and I hope you and yours have a great summer.

@@handcannon1388 He has them and he took them fishing but he didn't get a chance to use them (too long of a story to explain here) but he said it was very kind of you to send them. Greg said he also ties flies and he is very impressed with the quality. Long story story. He is way to busy for a "retired" guy and needs to get back to doing the stuff he loves.

anyone notice at 17:30 that Brian put on the plastic and cotton glove to protect his hand from heat/grease but instead used the glove hands on the knife and the unprotected hand to touch the greasy hot brisket?

Not really...especially the way we timed it. The briskets were in foil most of the time the ribs where in their drippy stage. The top shelf is emergency use...with 48x24 I don't need it much. I only used in on this one because it gave us more breathing room and made it easier to film.
