Pusô refers to preparing and serving rice in woven coconut leaf pouches and then boiled. As the rice cooks, the grains expand to fill the pouch and the rice becomes compressed.
Pusô can be made in so many different shapes and sizes using different techniques. And each design has a specific name.
In the Philippines it is known by the name Pusô in Cebuano, Piyusopusó in Mindoro, Piyoso in Maranao, Iranun and Maguindanaon, langbay, lambay, or linambay in Waray, Bugnóy in Hiligaynon, Tam-o in Aklanon; tamu, ta’mu, or temu in Tausug and Yakan; Sinambong, patupat (made of sticky rice)or pusú in Kapampangan, Pangasinan and Ilocano. It is also called Ketupat In Indonesia, Malaysia, Brunei, Singapore; and Atupat in Guam. In Bali Indonesia, It is called Tipat
