Hi and welcome back to my kitchen. This week I'm showing you step by step how to make these pretty rice paper sails to add onto your cakes. I go through what rice paper you need to use, how to colour, shape and dry your sails and how to then add them onto your cakes.
These would look so pretty on a wedding cake or birthday cake, or why not colour them blue to look like water for a mermaid themed cake.

To dry the rice paper sails I popped them into an oven set at 65°C (normal oven setting) for 1 - 2 hours.

You always amaze me and come up with the greatest techniques. I'll come up with a question I want to ask you at the end of the video and before it's even over you've answered my question before I've asked it you're amazing I just love that effect and it looks hombre and it's purple and pinks and it's just oh my Lord so beautiful you are so talented thank you for sharing and it's always keep on caking

BTW, u don’t have to wait till the rice paper is soften before taking it out. In fact, it’ll be much easier to dunk it in so the water completely covers it, then take it out immediately, tap the tip of the rice paper against the plate’s edge to remove excess water, while the rice paper is firm that way u can still handle it. Place it on whatever surface you want then colouring etc the rice paper will soften in a few seconds. I’m Vietnamese and that how we use rice paper to wrap rice paper rolls without the edges all bunching up or sticking onto itself (unless that’s the look ur are going for!) 😇

After making one rice paper. I decorated my cake and put it on the fridge and it shrinked. Can it be put on the fridge after decorating it on the cake? How long does it last

I know that with the sheets of rice paper humidity or differences in the weather can affect it. Is it the same with this kind of rice paper? Seems to be a bit sturdier. Is like to use it for a cake in making in October. Thoughts?

Thanks for your video, i love how much explanation you give. Can you please tell me if the rice paper softens once on the cake, is this something you should add at the very last minute or does it stay dry and hold its shape. Im concerned about putting it on the cake the day before and it falling apart. Thank you x

Hi Janet, with the Vietnamese rice paper I used for this cake, once it has dried out and is hard it stays completely hard. I have also tested it in the fridge and it still remained hard, so it should be fine to add it the day before.

Thank you for this! I had to make some for the first time, and did it along with your video. Really easy to follow and they look great. Especially thankful for the oven tip as I have to put them on a cake in 8 hours and didn't do research before to find out how long they take to dry 🤦🏼 Next time though I will wear gloves as I've made blue and green ones and now my finger tips and nails look like they mouldy 🤣🤣

Looks gorgeous. Thank you for including how to attach to the cake because that’s what I was struggling with and haven’t found videos on how to do that until this one. Would the Candy melts work If have a Swiss meringue covered cake instead of fondant

You can just spray the paper with water and rub it in. It will be much less wet and dry so much faster. It will also slow you to control the depth of color much better.

Hiya can the cake be kept in the fridge with the rice sails on?. Wondering when brought back to room temp whether the sails can be effected

I actually kept some of the sails in the fridge to see if they were affected and they seemed to keep their shape and stayed hard, so I think it will be fine to add them into the fridge.

I made these last using the same ingredients other than the silicone mat. We used parchment and all the paper has stuck to the paper. The are solid/dry but left a rough texture and paper behind. Any tips?

Without the oven, can we dry out them in the room temperature? If so, how long does it take?

Yes definitely, they just take a little longer to dry. Depending on the temperature where you are I would leave them overnight or around 24 hours to dry.

Hi Liz, I actually placed the sails in the fridge and they stayed completely solid and kept their shape, so yes that would be absolutely fine.

Thank you for this. I definitely want to give the technique a try! How far ahead can you make the sails? Do they store for a while in an air tight container or do they need to be used straight away? How long will they last on a cake? Do they go soft over time?

You can make well ahead of when you need them. Just keep in a cool dry room afterwards, no need to store in plastic box. They last for ages.

As i tried making these ..silicon mat works best but sails stick to the parchment paper..how to get the scrunchi effect without using Parchment paper or is there any other technique that it doesn't get stick to paper after getting dried

Hi Shelly, Since making these I have found that some brands of parchment paper don't work as well as others. Depending on where you live I always use Sainsburys parchment paper. You want a parchment paper that feels quite shiny, some brands seem to be more like just normal paper. I would definitely test a different brand if you can find one different to the one you have used as it really does make so much difference. With the Sainsburys one they just come straight off.
