"LOCRIO DE ARENQUE" in the Dominican Republic, this dish was considered a "Poor Man's food" but things has changed. Smoked Herring it is not easily found in groceries stores, when it is found, it is not cheap, but it is still affordable. Back in the days, Arenque was very popular and consumed especially during Easter week, since people avoid eating meat. This Smoked fish can be prepared in many different ways, and every time it is consumed, it is a Winner.....
Although this dish was considered "The Poor Man Food" , it is a thing of the past. Smoked herring was considered a lesser food, things has changed, this humble fish it is not just consumed by the poor. The combination of these two ingredients coming from faraway, another part of the World fits perfect together and its taste is unforgettable...

Locrio de arenque( Rice and Smoked Herring fish)
3- Smoked Herring
3 pieces of celery
Bunch of cilantro
½ Onions
½ Bell pepper
2 Spoonful Garlic
2 spoonful Coconut Oil
2 spoons Oregano
3 spoonful of Sofrito
½ Pepper
2 Spoonful Caldo de Tomate Knorr
1 Spoonful Vinegar
3 Spoonful Olive Oil
2 envelopes of Sazon Goya with Achiote
1 Can of Coconut milk
First Boil the Smoked Herring in water for about 5 minutes. After boiled, remove all the bones from the fish, put the water through a strainer and save it to cook the rice..
In a small blender, Blend the Celery, Cilantro, onions, Bell pepper with some water
In a pot add some Coconut oil and melt it.
Add the Onions
Add Garlic
Add The oregano
Add Sofrito
Add black Pepper
Add Caldo de Tomate
Add the mixed celery/pepper
Mixed all together and add the Herring( Arenque)
Add Vinegar
Add Olive Oil
Add sazon Goya Seasoning with Achiote
Add 1 Can of Coconut milk
Add a bunch Cilantro
Add about 5 cups of the water from the hearing/ total 5 cups
Washed the Rice to lose the starch
Once the water starts boiling add the rice, cook styring it constantly until it simmer to prevent the rice from burning.
Once the water is dry, stir the rice and remove off the sides, lower the Temperature to low to cook slowly.
Rice shall be done in 10 minutes, depending on your stove.
