Kinda late but the actual song Breezin' is written in the key of D major and George plays mainly A mixolydian with some chromatic/blues thrown in. Here, Rich has essentially transposed the melody to C major and is improvising various modes over the chord progression C - Am - Dm - G. If you're curious, the chord progression in Breezin' is actually D5 - Bm7 - Em7 - G. I think the video is more about showing how to add blues to a major key than about Breezin' specifically.
