Next time you make fish tacos put the cheese on a non stick skillet and melt it on the tortilla first then flip it. Warm it or crisp it the way you like. I really love that way better that putting room temp or cold cheese on top of the warm fish. It makes a world of difference with taste and texture. Also, mix some mayo, fresh minced garlic, and lemon juice as an aioli. That combo with the cajun is the best. Enjoy and keep fishing Spencer. Happy New Year.

Never even heard of Walleye till my forties. Then I went to South Dakota for a job for two years. Walleye is even occasionally in the supermarket. I agree Walleye may be The Best tasting fish.

I'm a new subscriber. I don't usually subscribe to non fly fishing shows but you have an easy way about you. Something I look for in catch and cooks is the recipes. My favorite way to cook fish is very simple. I like to do a fillet of Walley or two, a whole lemon sliced onto the fillets, salt, pepper and a little butter. Wrap tight in tinfoil and lay it on your grill for twenty minutes. The lemon and butter will do a beautiful job of cooking it! My second favorite is Fish Tacos. Those are done your way! Best fish around thank you for giving a damn about cooking your catch!

To get rid of the fish smell on your hands, wash hands soap n water. Rub them flat on a clean and wet stainless surface like the bottom of your sink. Works for onions too. Not sure why. Might because stainless steel is a self passivating material. Great video Spencer, always!

Get yourself some electric socks and get a coat that is electrically heated. I have them and they make a huge difference in the cold! I think the Northern Pike taste great too! Carp out of cold water is great for canning and pickling.

Nice fish. We don't see those species unless we go up north of Effingham County on the Savannah River. Never occurred to me to make fish taste less like fish...hmm; actually I fillet and skin most of the salt water fish that are big enough these days but when I was growing up we fished and hunted for subsistence and if it wasn't "poisonous" we learned to eat it. If you came to my house, you ate the dark meat and the skin and picked bones or went without. Our classic meal was fried fish, hush puppies, sliced tomatoes and grits. Never hear of a taco of any kind until I was in my twenties.

You are a decent fellow, have a dry sense of humor and most of all - you are ALWAYS on fish! Your current subscriber count proves this. You and a couple other channels got me through the covid lock-ups. I am eternally grateful. Oh, and one other thing. When I was 60, I hiked/hopped/jumped out about 2/3 of the way on a .56 mile jetty here in So. Cal. How do you get the pond/river/lake taste out of freshwater fish. I love catfish and it taste completely different. Everything else taste like what the water smells like or vegetation near a bank.

Most strong flavors come from the red meat. Cut as much off as you can and they taste much better.
