Including the little old ladies so you are safe, if someone sees something happening everyone in the area steps up. The only safety she needs to worry about is from Jack Frost he is a Brutal asshole!

12:07 - the different types of tomatoes. The tomato sauce is used as a liquid in the chili. The paste is concentrated tomato flavor to add more flavor and body to the chili. It is also a simple form of adding in umami flavor. You could sub it out for soy or Worcestershire sauce and a squire of ketchup. The diced tomato is to add in texture and visual appeal to the dish.
@katarina185211 ай бұрын
-55F!? 😳 Yikes! You’re a brave woman. Blue needs a winter coat even for inside the truck seeing how water freezes while your driving. Sheez. Regarding tomato sauce, tomato paste and diced tomatoes…lol, tomato paste has a more intense flavor than tomato sauce and enhances the recipe, tomato sauce is thicker than the liquid in diced tomatoes so without it the dish might be more bland, and diced tomatoes obviously have nice little chunks of tomatoes. So each brings something good to the dish.

Its refreshing to see someone learning cooking this way. Tomato paste is meant to thicken the chili and build fond (the brown bits in the pan - tons of flavor) when you cook the beef and onion together. the tomato sauce probably adds volume to the recipe. The dice is for the actual chunks you eat, it helps add a different texture so its not just all beef. Great job making a chilli you loved! Now comes the fun part. Start adding stuff you love and make it your own. Good add ins can be peppers, bbq sauce, dark chocolate, or spicy peppers like jalapenos.

To your question about the three tomato bases. Paste thickens, sauce gives volume and diced gives you “lumpiness” as do the beans. Suggest adjusting the powders to your taste and like my sainted grandma, who was the most amazing cook, always said “taste, taste, taste as you go” and “remember that you can always add more but you can’t take it out”. These two grandma approved adages forever has helped me when I cook. ❤ P.S. and after all my great comments you did exactly that! I have worked in Siberia in -70 or so. Steel at those temps does weird things. Russian steel will shatter as one of the gears failed in a bulldozer and it just shattered. Just walking to the mess hall was a major effort and I am amazed you could fill your truck without gloves. I got some frostbite from exposed skin at -65. I think those temps are a bit on the warm side as when it hits roughly -70 the snow that forms is a brilliant white because its actually the CO2 freezing out of the air forming dry ice. Like others have pointed out, its one thing to do this because its work and you get paid to, but to do it for "fun" is a bit on the wild side. Think safety at those temps as the slightest screw up and you only have minutes before things can ice up. We also used army tracked vehicles to get around. GAZ71's and APC's were the most common. Glad you are heading south now.

check pinion nut make sure it's not loose and or backing off. loose nut can cause the drive shaft to slightly wobble the pinion if the nut comes loose causing a leak. any metal piece moving or not can sheer at those temps, be very careful. if poe's not building heat when moving, partially block the radiator from the front like the big rigs do... diesel engines need heat to run/combust properly. stay safe, happy trails!

Amen, amen, amen! This is the second roaming reckless video I have watched and tbh I am concerned for both Maria and Blue. Initially, I thought “this is cool content” but then I got worried quick as in that first video I was watching (where she rented the yurt) she didn’t know to open the flue on the woodstove…causing the yurt to fill with smoke and preventing the wood from getting enough oxygen to start an actual fire and thus heat the yurt. So her solution was to hike like 2 miles back to the defender in the middle of the night. YIKES! Comments like the ones above from the forest Ranger and the nurse are not to be snarky or alarmist, but these are people who know better than you and imho it’s so dismissive to brush it off like “we’ll be alright”… not to mention, WHEN something goes wrong and you have to use your satellite phone you will be putting others in danger when they attempt to come to your rescue. If they’re even able to get to you in time in such harsh conditions. My brother-in-law was a Coast Guard helicopter pilot in Kodiak for 5+ years and every call that they answered put him and his colleagues at risk as well so I’m extra sensitive to the safety of those brave first responders. I just don’t get it…why are you planning to drive further north into colder temps? Why brush off these informed, concerned comments? Imho you’re playing with your own life not to mention Blue’s, and while I admire an adventurous spirit, I don’t understand why? What are you trying to prove? Seems very Chris McCandless/Timothy Treadwell in nature to me…yes these are totally different scenarios but you seem to have the same air of false confidence and it’s hard for me to watch in real time tbh. You are a beautiful, bold young woman and Blue is a stunning sweet dog not to mention an innocent party so yeah it concerns me as this is indeed reckless. Also these comments, sheesh! It irks me that 90% seem to be more concerned with the chili recipe and the difference between tomato paste and tomato sauce than the extreme scenarios she’s repeatedly putting herself in 🙄😬

Someone's likely can answered already, but crushed/diced/peeled/sauce/paste forms of tomatoes is a shortcut to achieving particular textures in a dish. You could also just use one or two whole tomatoes, applying the desired textural transformations.

Mmmm, i hope you have talked to some people from Fairbanks about your trip north. Just seeing the way you dress and the equipment you have....you don’t seem prepared. I lived in Wiseman (close to Coldfoot) for a year and I'm from Alaska - and I'm telling you girl, what you are planning is no joke. There is no cell service up there, very few people, and no 911. By no means do i think you're incapable or that a girl shouldn't do it alone - after all i did it for a year on my own when i was 24 - but i knew what i was doing and i had lived in Fairbanks for several years before i went north. Please reach out to someone and get help prepping for your trip - weather in Alaska is often fatal! I will say one thing that may save your life: if anything happens to you on the Haul road - get a ride from a trucker! There will be nobody else. And if you wait too long you will freeze to death.

As an Alaskan, I agree, this is so dangerous. Driving this road, especially in winter conditions, is serious business. There will be no help available unless a truck driver passes by. Rental cars are not even allowed on this road during the summer months. If you break down and are lucky enough to find someone that is willing to go out there to help tow you back to town - you will be waiting hours (maybe even a days) and the tow bill be in the thousands. Please be safe and don’t push the limits with Mother Nature. It isn’t worth it.

I would suggest buying a can of chilli, cheaper and no cooking!! I just started watching and wondering why you parked so far away from Home Depot when there was parking up close? Also, you should always be wearing a winter beanie and gloves, even walking into HD. Loving this!

USE crushed tomatoes. I just discovered cooking ground beef in liquid after age 60, so don't feel bad. Just cook it down on a low simmer so it is thicker. Have the spices in with the ground beef. You can leave out onions and use some chopped green pepper, instead. LOTS of ways to cook everything. GOOD JOB!

I learned how to cook from trial and error. The best way to find out what you like. The more you cook you will find out what spices and flavors you like.

I’m no chef but I’m a heck of a cook. Tomato paste has concentrated flavor which helps the dish taste better. Chopped tomatoes gives texture. Most recipes can be adapted to your taste. I like fresh tomatoes but I don’t really like red sauce so I never use tomato paste. When I try a new recipe I follow it to a T. The next time I do it I adjust to my taste. Congratulations on your chili chef!

easy chili recipe. 1 lb ground beef, one chopped onion, diced red or green pepper, cook in pot, add in 1 jar pace medium salsa, 1 can crushed tomatoes, 1 can pork and beans with brown sugar, throw in lots of chili powder, cumin, garlic powder, salt and pepper, cook until all is thick, if too thin I add broken corn chips that break down making it thicker. This freezes well, is great on hot dogs, with cheese, sour cream. pure yum

Maybe pick up a regular little butane stove? It seems like it would be way easier for meals than just the jet blue. I have one it packs up nice in a little case and it’s basically the same as a single stove burner. It’s nice. Just seems like it would be easier. lol.

Ria- professional chef here: tomato paste is concentrated tomato. Gives great depth of flavor. Tomato sauce gives flavor, body and volume, and diced tomato gives flavor, texture and volume. If you HAVE to use only one, use tomato paste and add extra water/broth. With tomato paste make sure that you cook it some first before adding other ingredients. It’ll break it down and cook out the raw tomato acidic taste.

One of my favorite episodes !! Can you please participate in a Chili Cookoff this summer?

In very basic explanation is paste makes sauce thicker, chopped or diced tomatoes add texture and canned sauce is smoothie in a can. You usually don't add paste unless you want to thicken up what you're making i.e. chili, spaghetti sauce, etc.

Hey! Currently Building out my van to travel and do ministry in, but somethings I'll end up doing and recommend if they haven't been done already is take some Mylar (space blanket/survival blanket material) and make a lining in the cab (I believe they make a wrap style film to make it easy to adhere to your walls and floor). Another would be to take some Caulk or some silicone and run a bead around where they added the new top on if they haven't already. That, and around where you are getting those air leaks. A set of window covers will definitely help if you don"t already use them. Just a few things that might help you and Blue out!

Chilli is the best! I make a mean bowl of chilli but it's pretty spicy.Throw everything into the pot and let it saute. I just use diced tomatoes and not the other tomato products you mentioned. You don't need to know how to cook. You know how so many other things that alot of us don't know.
