I also season the cavity so the flavour is inside and out. Also, I place the chicken on top of a rack so the juices drip down to the pan and won't touch the bottom of the chicken. This makes the bottom not soggy and crisp up like the leg and breast part.

There is nothing like a good roasted chicken and the simplest, the better. My favorite way to season my roasted chicken is with salt, pepper and dried garlic. Occasionally, I put wedges of onion inside the cavity or around the inside the roasting pan to flavor the juices; I use the broth to flavor my rice. Roasted whole chicken or chicken pieces make me happy. Thank you so much for sharing your recipe and techniques.

Nearly my recipe! My only suggestion is to add a a half lemon’s worth of juice to the top of the bird midway. Then put the other half inside the bird (and give it a bit of a squeeze). The lemon tenderizes the meat and adds a bit of flavor. Delicious!! 🍗

I am 35 and have been cooking for over 18 years, cooked chicken hundreds of times in many forms, but have never roasted a whole chicken! I am going to try yours, as in my long experience its always best to master a base recipe and then add your touch from there :)

We just made this for our New Year’s Day brunch. It was fantastic! I like how you break down the recipe into simple steps. This was the most tender and juiciest chicken I’ve ever cooked! Even the white meat, which my family usually avoids, was super juicy! I also made a gravy from the drippings by adding a tablespoon of flour, a cup of chicken broth and simmering until thickened. Great dish!

What you don't eat chicken but you do eat turkey, why? If your worried about chicken being over processed you should look into turkey farms (unless your eating Wild Turkeys that are hunted and cleaned at home). Just querulous.

Off topic - you look great in a white turtleneck (how can anyone cook wearing white is beyond me, this is what huge pro’s do, I guess:))) PS this is how I usually roast my chicken ☺️ but I also put some salt inside the bird (not the seasoning, just salt), and a few wedges of lemon or a rosemary twig inside. Hello D. We have been doing the cheecken here since Noah played with toy boats....but it's always been hit or miss. One time rubber, the next time dry, and the next near perfect. The cycle continued for eons. So today in search of the perfect luncheon bird sandwich material for my hunting pack (One must have sustenance) I started looking around and settled on your method. Just got through taking the meat off the bone and I have to say, possibly the best we ever cooked here. We seasoned well with Tony Chacerony, salt and pepper. It was still the teensiest bit raw (cavity check) at 165 so we let it go to 175. El perfecto! Writing to say thanks 10 hundred times. Ya done great! UPVOTE and RECOMMEND! (PS... We went to the store for a rotisserie chicken today (lazy way out) but they're always an hour out, somehow. So we bought the chicken.)

It is freshly cooked and comes without convenience from the supermarket. Therefore, a clear LIKE. I would definitely fill the belly of the chicken with herbs. This gives a very intense aroma. I use my fried chickens for filling: parsley, garlic halved with peel, lemon zest and pressed juniper berries.

Any time I think roast chicken, I think back to when I was a kid and my mother would make it (she'd cook it in a clay pot though - and it made the meat sooo good). My first order or business as soon as the chicken was out of the oven was to peel all the skin off it and scarf it down myself, haha. I've always loved the skin, it's the best bit. Then I'd munch on the wings and thighs, leaving the breast for my mother. When it comes to chicken, not a whole lot has changed, tbh. I still scarf down all the skin before anyone has had the time to get to it, followed by the wings and thighs. Lucky for me, my S.O. is a little bit more conscious about his waistline so he goes for the breast anyway and doesn't get as offended by me taking all the good stuff, haha.

Bought a pressed flat chicken seasoned with "Brazilian style" spices from the store. Roasted it and when I tasted it , I had to spit it out. It tasted like tobacco mixed with coffee and dirt. Now I bought some dishwasher poultry shears and I will make my own and season it the way I want.

I think your oven is identical to mine. Which means it has a convection option. If choosing the convect option, wouldn’t that eliminate the need to turn the pan?

I know the point was simplicity, but I feel starting at a high temp, then lowering, basting every 20 min yields a little better results. And don’t be stingy on the seasoning, it’s the best part!

0:50 4 to 5 pound chicken Mine is just under 6 lbs 1:02 take chicken out of fridge 30 minutes before so it can come to room temp. 1:25 425 degrees preheat oven 1:38 start high then lower the temp 1:48 rack liower 1/3 of oven 1:57 pat chicken dry with paper towel. 2:26 kitchen twine 2:55 thin even layer of oil all over the bird 2:58 seasonings. Rub spices all over chicken. Roast 70 to 90 minutes depending on size of bird. 5 lbs took 85 minutes to cook 3:43 bast half way through 3:58 turn pan half way through bcs hot spots 4:12 temp in thickest part of the thigh. 165 deg F. Breast meat only needs to be 155 to 160 deg F. 4:49 let rest 15 minutes
