Love cherry tomatoes and pasta! When my garden is at the end of the season and not having a bunch of cherry tomatoes, I roast them in the air fryer so I don’t have to run the oven for just a few. Really easy.

Pastas...I've been using Barilla's "Thick Spaghetti" which is, surprisingly enough, thicker than regular pastas but not as large as bucatini. It's my favorite mainly for texture. Love your channel!

I’ve been making this for a couple years and my kids love it. Problem is they don’t like the skins so I end up pouring it in a blender. Also found a little onion takes it to a new level. Roast the garlic in the skins and skip the foil.

I am wondering for this recipe, would it be ok to roast the tomatoes in the oven safe pan that will go to stove once tomatoes are roasted and continue the recipe from there to completion? Just trying to wash one less pan :)

No difference really, but it's easier to over salt with regular salt. Because the crystals are larger in Kosher salt they can be sprinkled more evenly. The only place I use table salt is for my pizza dough. Everything gets mixed well in the dough and I've standardized all my pizza dough recipes for regular table salt. Thanks for liking the channel😀🙏

I've got a quick question about tomato paste. I recently learned that tomato paste is something that you typically want to put in a pan and fry for a bit before adding liquids. But, in this video, I see you're adding it as a sort of substitute for actual tomatoes (which is how I've probably used it most frequently in my own cooking). Is there a general rule of thumb about when to "cook" the tomato paste versus just adding it straight into a dish? Thanks!

Maestro, this is odd synchronicity -- I had some old grape tomatoes and yellow heirloom tomatoes remaining in the fridge after a week of traveling. The tomatoes were slightly wrinkled, but, otherwise in decent shape, especially for sauce. Last night, I made a sauce much like the one in this video. I sliced the grape tomatoes in half (I find this aids cooking and moisture evaporation), cut the heirloom tomatoes into 1/2-inch cubes. Sauteed some minced garlic, added the tomatoes and reduced. I used an All-Clad non-stick pan for this -- very wide pan diameter (14.5"), which helps with quick evaporation. Added some dried oregano and basil. Could have added white wine, but, I was hungry and didn't want to wait for more reduction, so, I skipped that. I didn't have any liquid cream, so, at the end, I added a couple of dollops of light sour cream and light ricotta cheese. The end result was a deliciously creamy tomato sauce. I had it on bucatini, which I really love because it has great "mouthfeel." Perhaps there was some thought transference at work, as you were thinking about this recipe. :) I tip my hat to you -- this is a very tasty recipe!

There might have been some transference! Everything you did sounds great! I had a lot more footage that got scrapped where I talked about how awesome this Vigor pan is. It's a 14" stainless that can easily hold a pound of pasta. It's probably not as good as your All-Clad though. To be honest, the only stainless pans I could find in this size range were those two. I love this dish! I add shrimp lightly floured and pan seared tossed with garlic butter and pour it right over the pasta and cherry tomatoes. So yummy! I loved your eggplant rolatini dish. It's the best one on KZbin hands down ❤

You could throw in a bit of hard wood. Maybe apple? I've never done it but it sounds like a great idea to give the tomatoes a smoky flavor.

RE: Tomato paste in a tube. Very convenient. Also, VERY expensive. A tube of tomato paste - at least, in my grocery store - is about 8 times as expensive as the small can of tomato paste. It is so much cheaper to open the small can of tomato paste, use what I need and - regretfully - throw the rest out.

We use tomato paste from a can as well! We freeze the leftover tomato paste into ice cube trays and that way you have them in approximately 1 oz portions for future use :)
