Well here in Chile is summer, that means tomato season. What a fantastic way to celebrate it! I had some italian sausage (homemade) , tomatoes and basil of my garden. I cant thnk you enough. Made this for dinner last night. Went a little light on the sausage (1 LB), because I didn't want to buy 2 packages and then have a 1/2 LB left over. I also browned my sausage a little more than you did on a higher heat - I think it improves the flavor. It's a great recipe. Tomatoes aren't in season right now, but Costco has nice containers of grape tomatoes that worked really well in this dish. I followed your suggestion of only halving half of the tomatoes to give some texture variety, and that worked very well. Thanks for the video and keep up the good work!

I love the way you cook. Frequently, during your videos I'm hearing you say things like "leaving some of the cherry tomatoes whole and some sliced in half" for the delightful variation of texture. I feel exactly the same way! People unhappy about cooking . . . shouldn't be cooking! Plain and simple ;-) . . . allow me to cook . . . I love it!

I almost made this, but instead I made Pesto Chicken Cavatappi with Cherry Tomatoes, mushrooms, and sun dried tomatoes. It was excellent. I picked up some great Cherry Tomatoes, but not as good as the ones from your garden, I’m sure. This recipe is great this time of the year. I’m making an Italian Pasta Salad tomorrow, which I like making at least once every summer. It’s prime tomato season! TFS, brother.

I would add just a soupcon of crushed fennel seed to the cooking process with the onions. Other than that, wine reduction sauces are fantastic.

Love your recipes - Sip and Feast. In this recipe or others containing wine please give your suggestions for an alternative as there are people that are allergic to wine or the nitrates. Think your viewers who dont know the substitutes would appreciate this if they want to make these recipes without the wine...

Where did you get that beautiful Italian sausage? We don’t have access to any meat markets where we live, but one of our local grocery stores does nice loose, or link Italian sausage. I think we just might have to take a trip to that store this week!

I am fortunate to have access to a lot of good ingredients. If you have a good place near you, it's worth it to buy the better quality ingredients. But I'm planning to make sausage in the fall with the Kitchen Aid grinder attachment. If you have a Kitchen Aid you'll be able to make better sausage than almost any of these places. Stay tuned!

@@SipandFeast One of these days I’m going to get a Kitchen Aid because I want to make pizza dough, and I’d like to try making homemade pasta. I’m not able to knead because of arthritis, and certainly I can’t for, say, eight minutes. My husband and I were just saying we’d like to grind our own meat for hamburgers, and I had forgotten Kitchen Aid had a grinder attachment. I look forward to seeing a video on making sausage.

Hi James, I made your pasta and zucchini with Calabrian peppers. It was great. I have three questions: What other dishes do you use the Calabrian peppers in? Am I washing my basil from the supermarket correctly? I just rinse in a colander and let dry on paper towels. The reason why I ask is because I think I am losing the fragrance of the basil. Am I? I like your pan and you have said it is a great pan; however, your links to your pan never show your exact pan you use. What is the exact pan you are using and can you link it? One link is a pan with no long handle as yours has, and this recent link is to some non stick pan.

Thanks man! I use the Calabrian chili peppers really whenever I want some heat. Try them in vodka sauce in Arrabbiata and Fra Diavolo. I recommend washing supermarket basil right before using it. The basil you see me using is grown in my garden, so it probably looks a bit fresher. The pan is a 14" stainless steel fry pan by Vigor brand. Webstaurantstore sells it along with a few other vendors. Just google the pan name and you'll find it.

I normally use 1 pound of pasta which will yield 4 good sized servings. For a dish like this you could probably get 6 servings since the sausage is very high in calories.

Hey thanks! The sausage for this recipe was purchased at Meat Farms. I often shop there and at Uncle Giuseppe's. Whole Foods sausage is excellent too. But since you live in Long Island why not buy the good stuff at an Italian pork store like Ivarone brothers or A & S.

All different brands. In this video the sausage was purchased at Meat Farms which is a Long Island grocery store. Whole Foods Italian sausage is always excellent. If you have an Italian specialty/pork store nearby they'll most likely have the best sausage.
